How To make Reduced Fat Beef& Salsa Burritos
1 1/4 pounds lean ground beef
1 1/2 tablespoons chili powder
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper
10 ounces frozen chopped spinach
thawed
and well drained 1 1/4 cups prepared chunky salsa
1 cup shredded cheddar cheesel lowfat
10 medium flour tortillas; lowfat :
warmed
In large non stick skillet, brown ground beef over medium heat 10 to 12 minutes or until no longer pink, stirring occasionally. pour off drippings. Season beef with chili powder, cumin, salt and pepper. Stir in spinach and salsa; heat through. Remove from heat; stir in cheese.
Spoon 1/2 cup beef mixture in center of each tortilla. Fold bottom edge up over filling; fold sides to center, overlapping edges. Yields 10 servings.

Meal Prep Chipotle Style Burritos
Watch how easy it is to make bulk chipotle style burritos to freeze for later. Make 16 healthy burritos. Skip the tortilla and makes these into bowls.
Make your own taco seasoning:
To reheat the burrito, wrap them in a damp paper towel and microwave on medium for 5 minutes.
Ingredients:
3lbs Ground Beef $8.63
1 Lime $0.11
2 Cups white rice $.50
Salsa Jar $4.95
16 Tortillas $3.49
2 Cans Black Beans $1.69
1 Large Yellow Onion $0.99
Bunch of Cilantro $.79
3 Green Peppers $1.99
2 cups shredded cheese $.99
Homemade Taco Seasoning $.25
Total $23.25/16 Burritos $1.45 Each
Brown Beef and drain. Add Seasoning with cup of water.
Boil water for rice with oil and salt. Add rice and lower heat.
Simmer beans in sauce pan.
Saute onion and peppers.
Shred cheese.
Assemble and enjoy. These freeze great!

600g chicken thighs skinless boneless
6g smoked paprika
6g garlic powder
3g cayenne pepper
3g cumin
4g salt
black pepper
Mint sauce:
200g skyr
15g oil
10g mustard
10g vinegar
20g basil
10g mint
10g cilantro
salt, pepper
salsa:
1 onion
2 cloves garlic
100g tomato salsa
200g chicken stock
3g smoked paprika
1g chili powder
1g cayenne pepper
1g cumin
salt, pepper
6 tortillas 20cm or 9,5inch
140g shredded cheese
Directions:
Add chicken with the spices into a bowl and mix everything. Add a bit of oil into a baking dish and dump in the chicken and spread them. Bake the chicken at 200°C or 400°F for 15-18 minutes.
Combine all mint sauce ingredients in a blender and mix it for 20 seconds. Transfer the sauce to a squeeze bottle.
Add oil into a pan on medium heat and add in the onions. Fry them for 3 minutes. Add in more oil crush in garlic, and keep frying for 15 more seconds. Now add in spices and toast them for 30 seconds. Add in stock, salsa, salt, and pepper and mix. Let it simmer for 8-10 minutes on low heat.
Now prepare the 6 tortillas and fill them with chicken, 10-15g of mint sauce, and 15g of cheese each. Roll them up. Add to a baking dish half of the salsa, spread all 6 tortillas in, and add the other half of the salsa and 50g of cheese. Bake this for 3-4 minutes at 200°C or 400°F just until the cheese is melted. Done!

High Protein & Low Calorie Fried Rice Burrito!
If you love egg fried rice and burritos, why not combine the 2? One of my new favourite recipes, tastes so delicious and is perfect to prep in batches to store in the fridge or freezer!
Macros per burrito (can make 2-3 burritos total)
470 calories / 43g protein / 34g carbs / 18g fat
INGREDIENTS
For the chicken:
300g raw chicken breast cut into cubes
1 tsp paprika
1 tsp garlic powder
1 tsp black pepper
1.5 tbsp dark soy sauce (Brand: Lee Kum Kee)
for the fried rice:
1 tsp olive oil
130g mixed veg (carrot, peas, sweetcorn)
2 eggs
170g cooked rice (leftover rice works best)
1 tbsp soy sauce
1 tbsp oyster sauce (Brand: Sainsbury’s)
1 tsp sesame oil (Brand: Lee Kum Kee)
Cooked chicken
Spicy lemon mayo (only using 10-15g per burrito) :
20g light mayo (Brand: Hellmann’s)
10g sriracha
Squeeze of lemon juice
For the burrito:
Low calorie tortilla wrap (Brand: Mission)
50g fried rice filling
80-100g chicken pieces
Pickled red onions (I buy this in jars - Brand: Inspired to Cook by Sainsbury’s)
10g spicy lemon mayo
Green onion
Fold like a burrito the toast both sides
Cut in halves and ENJOY!

Ingredients:
1 pound ground beef
1/2 to 1 cup chunky salsa (any level of spiciness)
3 slices American cheese (or other cheese)
burrito-size flour tortillas
1. Brown the ground beef.
2. Drain the beef and rinse several times with hot water to remove fat.
3. Add salsa to meat until it coats the beef.
4. Melt the cheese over the meat mixture.
5. Stir well to mix.
6. Fill tortilla and fold as shown in the video.
7. Enjoy!
How to choose tortillas:
Try to buy a thicker, flexible flour tortilla. This is important because other tortillas can tear when you wrap your burrito. A good way to test this is to pick up the package of tortillas with one hand and move your wrist up and down. You can then easily compare the flexibility of the different brands that are available. As you hold the packages you can also tell by the thickness of the package how thick the tortillas are. Give this a try. It's definitely worth it.
I suggest you serve these burritos with refried beans and spanish rice, just like in restaurants. Be sure and read the ingredients in the beans. Many of the cheaper brands list lard as a main ingredient.
Staples are things I think most people in my neck of the woods have in their kitchen most of the time. I don't use the cost of those items in the calculations of the cost of the recipe unless it calls for a significant amount. I did not count the 3 slices of American cheese in this recipe.
