I also clean out my fridge - I mean not 100% but maybe like 50% because That's the amount of effort I have to give these days. In cleaning out my fridge I made sure to do some food prep and get all my fruits washed and put away! It saves so much space in the fridge! Hope you enjoy hanging out and seeing all of the new things I got from Costco in this costco grocery haul!

Oh It Fits: How to make KatieAnne100 Brownies
I make @KatieAnne100 brownies every single week.
**NOTE: all of these ingredients are available to me at my local Safeway. If you can't find FF cream cheese...I'm sorry!**
430g drained and rinsed black beans 100g pumpkin 100g fat free cream cheese 2 whole eggs 125g egg whites 40g old fashioned oats (blend first to make a flour or just use 40g oat flour) 25g coconut flour 60ml sugar free syrup (I used Maple Grove Farms) 14g Tollhouse chocolate chips melted & cooled 30g Hershey's chocolate cocoa powder 5g salt 20g granulated Splenda (yes account for the carbs) 1 tsp baking soda 1 tsp baking powder 1 tsp vanilla extract
** Katie adds extra Lily's Stevia Sweetened Chocolate Chips in the batter. I do not but you are welcome to**
Mix all ingredients in food processor - I start with the black beans, then all the dry goods (including Splenda and baking powder/soda) plus the eggs and egg whites, then all the rest of the wet goods. It's just how I do it to make sure it's all thoroughly incorporated.
I baked mine in a rectangular metal brownie pan (9x13), which I weighed first so I could easily subtract the tin weight from the total weight. Bake at 350 degrees for appx 28-30 minutes (take out when still slightly soft for fudge consistency).
Re-weight the WHOLE thing, and subract the tin weight to find the weight of your brownies if you want to make sure they are all equal. If not, just cut into 8 servings :)
My batter makes 8 HUGE servings cut into squares (about 114-118g each after baking). For those interested: 140cal 3F / 20C/ 9P per square. --------------------------------------------------------------------------------------------------------------- she loves herself for no reason I recognize what a privilege it is to share my life, my progress and my journey on social media. I recognize how problematic this industry is and how, in order to receive the benefits of an industry built on capital and greed, one must learn to play the game. I recognize that I have an obligation to use my platform to promote dialogue about intersectionality and diversity--how can we maintain a sense of individuality in an industry built on ideal (read: white, fit, lean) bodies? How can I utilize my position of privilege while minimizing how complicit I become in the exploitation of those who have not been afforded the privileges I have been? I am interested in transparent and honest conversations and constructive critical thought.
