1 Small garlic clove; crushed
1 t Vegetable oil
1/4 c Red wine
1 t Allspice berries; crushed
2 t Black peppercorns; crushed
Combine all ingredients in a bowl. Makes about 1/3 cup.

Crispy Chicken Red Wine Vinegar Butter Sauce
A crispy chicken with an amazing tasty tarragon sauce. The sauce is made from chicken stock, red wine vinegar, shallots, garlic and dried tarragon herbs. It's emulsified with butter for that smooth, creamy buttery flavour. The beauty of this chicken is that it gently cooks in the sauce, rendering it tasty and staying juicy while the skin on top roasts into a beautiful crisp. It's quite simple to make but please buy a whole chicken and make the stock yourself. You will have plenty left over, so freeze it for your next dish. If you don't have time then cut corners, it will still be an awesome chicken. Enjoy my Crispy Chicken in red wine vinegar or as known in France, Poulet au vinaigre de vin.

Set yourself up for a date night to remember! Make Pan Roasted Filet with Red Wine Reduction Sauce. An aromatic French spice rub adds incredible flavor to these incredibly tender filet steaks.

INGREDIENTS:
4 Certified Angus Beef ® filet steaks, cut 1 1/4 to 1 1/2-inches thick
1 1/2 teaspoons coarse kosher salt
1 teaspoon fresh cracked black pepper
2 teaspoons canola oil
5 tablespoons butter, divided
2 tablespoons minced shallot
1 teaspoon chopped garlic
1 cup red wine
3/4 cup unsalted beef stock
2 bay leaves
1/2 teaspoon dried tarragon

Red Wine Dragon Ribs
Here is what you'll need!
Red Wine Dragon Ribs
Servings: 4-6
INGREDIENTS
2 racks pork ribs (about 3-4 pounds each)
Salt
Pepper
1 cup of red wine
1 cup brown sugar
¼ cup apple cider vinegar
¼ teaspoon allspice
1 can tomato sauce
3 tablespoons tomato paste
PREPARATION
Preheat oven to 250˚F/125˚C.
Clean the ribs (remove membrane or score) and pat dry.
Place the ribs in a foil-lined roasting pan, and season both sides with salt and pepper.
Add about ¼ inch of water (about ½ cup) to the pan.
Seal the top of the roasting pan with foil and bake for 2 hours or until ribs are very tender.
Place wine, brown sugar, vinegar, tomato sauce, tomato paste, and allspice in a saucepan.
Simmer the sauce for at least 45 minutes and season to taste. The sauce should be rich and thick.
Raise oven to 350˚F/180˚C.
Remove ribs from roasting pan. Pour off all fat and water, and baste ribs with sauce.
Bake an additional 20-30 minutes. (You can stop and re-baste halfway through.)
Cut ribs and serve with additional sauce.

3 tbsp soy sauce
1 tbsp brown sugar
4 cloves garlic, chopped
3/4 tsp Italian seasoning
Thumb sized ginger, sliced
3 stalks green onion, sliced
1/2 cup water
1 tsp browning and seasoning sauce
1/2 tsp ground white pepper
1 tsp sesame oil
