How to make Anko (sweet red bean paste) from scratch 〜あんこ〜 | easy Japanese home cooking
In this video, I am showing how to make Anko (Japanese sweet bean paste) from scratch, from Azuki beans. Anko is used for most of Japanese sweets, such as Mochi (Daifuku-mochi), Dorayaki, Dango etc. This is also strictly vegan/vegetarian.
In my Channel, I show step by step of alternative but authentic Japanese home cooking, which can be made with the ingredients that are easily available outside of Japan.
Ingredients for Anko
Tsubu-An
- Azuki beans 200 g
- Sugar 150-200 g
- Salt 1/4 Tsp

Was craving this rice cake with red bean paste filling but wanted an easier way to make it. So... bake it in one pan! How easy is this? Plus, super delicious! Happy Baking in your rice cooker!
Rice Cake With Red Bean Paste Recipe | Baked Glutinous Rice Cake Recipe | EASY RICE COOKER CAKE RECIPES
NOTES:
* 1 cup = 250 ml
* My rice cooker capacity = 1 litre or 5 cups
* Please READ Important TIPS at the end of each video
INGREDIENTS:
• 1 3/4 cups (235g) GLUTINIOUS RICE FLOUR (or sweet rice flour)
• 1/4 cup (50g) SUGAR
• 1/2 tsp (3g) BAKING POWDER
• 3/4 cup (180ml) MILK
• 1/4 cup (60ml) OIL
• 1 EGG
• 1 cup (260g) SWEETENED RED BEAN PASTE
• 1 tbsp (10g) TOASTED SESAME SEEDS
HOW TO MAKE IT:
1. In a large mixing bowl, mix glutinous rice flour, sugar, baking powder, milk and oil until crumbly
2. Add the egg and mix until smooth and creamy, about 2 minutes. If batter is too thick or too runny, add more milk or flour; one tablespoon at a time
3. Greased or lined your pot or pan. The grease and liner will prevent cake from sticking
4. Pour in half of the batter then drop teaspoons of red bean paste into the batter, pressing bean paste down. You can use chopstick, knife or spoon handle to swirl bean paste more into the batter if you like. I did not do that
5. Bake for 2 BAKE and check. Rice cooker varies so check and bake longer as needed
6. Cool for about 30 minutes and enjoy! We had a power outage so my cake completely cooled for 90 minutes. As you can see, it was still chewy!
OVEN BAKING:
Bake in greased pan, in pre-heated oven of 325F (170C) for 30-40 minutes. Ovens varied so check about 25 minutes and bake longer as needed

120g azuki red beans
1L water
60g brown sugar
A pinch salt
Skin
200g glutinous rice flour
20cl water
1 tbsp vegetable oil
80g white sugar
30g cornstarch or tapioca starch
