Quelites
Ingredients:
12 oz. chopped frozen spinach
¼ cup diced onion
2 tablespoons canola oil
¾-teaspoon salt
½ teaspoon crushed red pepper
Prepared pinto beans
Directions:
Thaw spinach in the microwave, or let sit out of the freezer until it is no longer frozen. Drain all excess liquid from spinach using a dishtowel, or paper towels. Heat oil in a medium sauté pan and cook onions for about 2 minutes. Add spinach and mix until combined with onions. Add salt, crushed red pepper and continue to cook for about 10 – 15 minutes. You want to get the earthy taste out of the spinach. Combine with cooked pinto beans, or enjoy with red chile, or both!
Quelites are typically prepared during the Lenten season, but can be enjoyed anytime of the year.

Taco Tuesday: Swiss Chard (Or Spinach) Tacos With Caramelized Onion, Fresh Cheese And Red Chile
Homey. Simple. Satisfying. (And nutritious, too, though don’t let that throw you.)
I can think of about a million more words for these tacos with Swiss chard and caramelized onions inspired by something I ate at the huge Friday market years ago in Toluca. There, they’ll serve you wholesome tacos de quelites (a green we call lamb’s quarters in the States) from street stalls.
If a trip to Toluca isn’t in the cards —or you’re like us here in Chicago, merely hinting at Farmers Market season and can’t find lamb’s quarters yet— these tacos can be made with any green, really. Think Swiss chard, spinach, kale, mustard or collard greens.
If you’re looking to keep this dish completely vegetarian (or vegan, if you omit the optional queso fresco), opt for a splash vegetable stock with the greens. Chicken stock will lend more richness, though.
