How To make Quaker's: Vanishing Oatmeal Raisin Cookies
1 c Margarine/butter, softened
1 c Firmly packed brown sugar
1/2 c Granulated sugar
2 Eggs
l l/2 c all-purpose flour : l ts baking soda 1 ts ground cinnamon
l/2 ts malt (optional) 3 c QUAKER Oats uncooked
(quick or old fashioned) : l c raisins Heat oven to 350 F. Beat margarine and sugars until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Stir in oats and raisins; mix well. Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake l0 to l2 minutes or until light golden brown. Cool l minute on cookie sheet; remove to wire rack. Cool completely. Easy Bar Cookies: Press dough onto bottom of ungreased 13x9-inch baking pan. Bake 30 to 35 minutes or until light golden brown. Cool completely; cut into bars. Store tightly covered. 32 BARS High Altitude Adjustment: Increase flour to 2 cups and bake as directed. Ice Cream Sandwich Cookies: Spread softened ice cream on bottom side of one cookie; top with second cookie. Wrap in plastic wrap or aluminum foil; freeze. Remove from freezer a few minutes before serving. Chocolate Dipped Cookies: Place 2 cups (12 ounces) semisweet chocolate pieces in dry l-quart glass measuring cup or microwaveable bowl. Microwave at HIGH l to 2 minutes, stirring every 20 seconds until smooth. Or, place in top part of dry double boiler over hot, not boiling, water; stir occasionally until smooth. Dip half of cookie in chocolate; gently shake to remove excess chocolate. Sprinkle with finely chopped nuts, if desired. Place on wax paper until set. If chocolate thickens, microwave at 30 second intervals or set over hot water again until fluid. Best Oatmeal Raisin cookies recipe
Best ever!
Ingredients:
Soak 1 cup (155g) raisins in a bowl with 3 beaten eggs, 1 t Vanilla and 1 t Cinnamon for one hour.
In a separate bowl, cream 1 cup (240g) butter with 1 cup (220g) brown sugar and 1 cup (200g) white sugar.
Add 1 t salt and 2 t baking soda.
Stir in 2 1/2 cups ( 350g) flour.
Add the raisin mixture. Mix again.
Add 2 cups (200g) regular rolled oats or quick oats. If you use old fashioned oats, then “pulse” in a food processor/ blender 5-7 times for best results. Pulsing the oats will make them “finer”, therefore they will cook faster like quick oats.
Optional 3/4 cup (68g) walnuts or pecans.
Bake 350*F or 180*C
10-12 minutes

Crispy Oatmeal Raisin, Pecan, Chocolate Chip, Date Cookies using the Vanishing Oatmeal Raisin Cookie Recipe on the Quaker Oats box.
I used to follow the way the box tells you to make them, but somehow, they just did not taste as great as how I have learned to make them.
I make this cookie recipe all the time, and I put a twist on how all the ingredients are blend and divided into three batches, I can bake fresh cookies using the original cookie batter mix, two more times.
Or if you are baking for a larger group, than I would recommend using the complete three cups of oats and three cups of batter together to bake cookies in a larger amount, for friends and family.
You will see that the recipe calls for ¾ cup of brown sugar, I use ¼ cup instead that is also different than others baking this cookie recipe. I hope you try this cookie recipe out and let me know what you think.
Add your own favorites to the mix, if you are not liking raisin add cranberries or another dry fruit, add mini chocolate chips instead of the larger size chips, they work best for me. Follow my suggestion in the video, and you will enjoy tasty crispy oatmeal cookies you and friends are going to Love.
