1 cup gluten free AP flour
2 cups old fashioned rolled oats
1 tsp ground cinnamon
1/2 tsp baking soda
1/4 tsp salt
1/2 cup butter, melted
2 eggs
1/2 cup honey
1 cup raisins

Oatmeal Raisin Cookies Recipe | No Flour | Super Easy & Quick
These cookies are super easy to make and come out crispy on the outside, chewy on the inside.
Ingredients we used:
125 g organic whole rolled oats
40 g extra virgin cold pressed rapeseed oil (we used this oil because it has very little saturated fat and is high in vitamin E and Omega 3; learn more about this oil:
1 egg
3 tbsp sugar
1 tsp vanilla sugar
Pinch of salt
Pinch of cinnamon
40 g organic sultanas (or raisins)
Makes 12 cookies!

HEALTHY OATMEAL RAISIN COOKIES RECIPE:
1 1/2 Cups (120g) Instant Oats
3/4 Cup (90g) White Whole Wheat Flour
1 1/2 Scoops (45g) Isopure Unflavored Whey Protein Isolate
1 1/2 Tsp Baking Powder
1 1/2 Tsp Cinnamon
1/8 Tsp Salt
1/2 Cup (140g) Honey
2 1/2 Tbsps (30g) Coconut Oil Melted
1 Large Egg
1 1/2 Tsp Vanilla Extract
1/2 Cup (75g) Raisins
Pre-heat oven to 325 Degrees
Add all ingredients to a large bowl and mix until a thick cookie dough forms
Mix until well combined and a dough forms.
Once combined, line a baking sheet with parchment paper, and add the cookies using a cookie scoop (around 20 cookies).
Bake for around 10-12 minutes.
Once the cookies are done baking let them cool down completely in the cookie tray itself.
Once cooled, store in an air-tight container for several days.

Ingredients
8 tablespoons unsalted butter 1 stick, softened at room temperature.
3/4 cup granulated sweetener
2 eggs Must be at room temperature.
1 teaspoon vanilla extract
1/8 teaspoon freshly squeezed lemon juice
3/4 cup flour
1 1/2 cups rolled oats
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup raisins
Instructions
Preheat oven to 350 degrees.
Cream butter and sweetener in a mixing bowl using a stand or hand mixer on medium speed for about 2 minutes.
Add the eggs, vanilla, and lemon juice. Use the mixer and blend on low for 30 seconds. And then blend on medium for a couple of minutes or until light and fluffy, scraping down bowl.
With mixer on low speed, add flour, oats, baking soda, salt, and cinnamon, blending for about 45 seconds. Don’t overmix.
Fold in raisins.
Line a sheet pan or cookie sheet with a silicone baking mat. This will prevent the cookies from over-browning.
Roll the dough into balls (I measured 1 1/2 tablespoons for each) or use a cookie scoop. Flatten the top with your hands or with a spoon. You may want to use wet hands as the dough is sticky.
Bake for 10-14 minutes or until golden brown. When checking in on the cookies they should look really soft, but golden at the edges when ready. They will harden up as they cool. You don't want them to look firm in the oven. That will result in burnt cookies. Mine were ready right at 12 minutes.
Remove the cookies and cool on the silicone baking mat and cookie sheet for 5 minutes before moving them to a cooling rack. This is important. If you move the cookies too soon, they will crumble. Give them a chance to firm up.
Transfer the cookies to a wire rack to cool for an additional 10 minutes.

This oatmeal cookie recipe is also gluten free, soft and chewy, and almost as easy to make as those 2 ingredient oatmeal raisin cookies.

FULL RECIPE WITH METRIC MEASUREMENTS:
1 Scoop (30g) Vanilla whey protein powder
1.5 Tbsp (15g) Oat flour
1 Tbsp (10g) Raisins
About 1/4 Tsp liquid sweetener of choice
1 Tbsp (15g) almond milk
1/2 Tsp vanilla extract
Pinch of cinnamon
Add all ingredients to a small bowl (except 1/2 tbsp of oat flour and 1/2 tbsp of raisins)
Mix until a crumbly - if to dry add a tsp at a time of almond milk until one does form, if to wet add 1 tsp of oat flour and protein powder at a time until one forms - try to aim for what mine looks like in the video
Once crumbly, press the ingredients into one another until dough forms and becomes sticky. Once sticky add the extra raisins and oat flour and mix until combined into the dough. Now coat your work surface with a bit of baking spray and start forming a cookie out of the dough
When a cookie has formed add the remaining chocolate chips, add to a dish and refrigerate for about an hour or two
