Today we will be making OATMEAL RAISIN COOKIES, THIS ARE SO DELICIOUS AND SOFT. Recipe posted below!
INGREDIENTS:
2 Cups, oats 1 Cup, raisins
1 Cup, brown sugar 2 Tsp, baking powder
1/2 Cup, melted butter 1 Large, egg ( beaten )
1/2 Tsp, vanilla
METHOD:
In a medium bowl add oats, brown sugar and baking powder and toss together.
Then add melted butter to mixture and fold together.
In a small bowl beat one egg, vanilla, then add beaten egg to mixture and mix well, then add raisins.
You need a cookie sheet lined with parchment paper, drop batter by half tbsp full about 3 inches apart.
Pre- heat oven to 350ºF, set timer for 8 to 10 minutes, when baked let cool for a few minutes, before removing it from the pan. .
BAKING TIPS:
Baking cookies for 8 minutes for soft cookies, 10 minutes for crispy cookies.
Add more oats to thicken batter if a little wet.

Homemade oatmeal raisin cookies are so much better than ANY store-bought version. Even if you’re not a raisin fan they’re still amazing. Baking those raisins really wakes the flavor up and complements the oats, cinnamon, and brown sugar.

Oatmeal Raisin Cookies
These are my husband's FAVORITE cookies! I have all the tips and tricks you need to make this recipe turn out perfectly. Get the full amounts and baking time below.
This recipe makes 32 cookies.
Ingredients
2 cups all purpose flour see note
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
14 tablespoons unsalted butter room temperature
3/4 cup granulated sugar
3/4 cup light brown sugar (packed)
2 large eggs room temperature
1 teaspoon pure vanilla extract
2 cups old fashioned oats
1 cup raisins
Instructions
Preheat to oven to 350 degrees. Line rimmed baking sheets with parchment paper and set aside.
In a medium bowl whisk together the flour, baking soda, cinnamon, and salt, until completely mixed.
In a large bowl, with a hand held mixer or using a stand mixer, beat together the butter brown sugar, and granulated sugar until the mixture is light and fluffy. This will take between 3 and 6 minutes.
Add the eggs one at a time. Then add in the vanilla. Be sure to scrape down the edges of the bowl with a spatula before each addition.
Add in the flour mixture. With the mixer on it's lowest setting, beat the flour mixture into the wet ingredients until it just begins to combine. Then turn the mixture up and finish combinging it until it is just combined. Be careful not to continue mixing after the flour is combined in.
Mix in the oats and then the raisins.
Using a 1 1/2 tablespoon cookie scoop, scoop the cookies and roll them into balls. Place 2 1/2 inches apart on a baking sheet. Bake for 11 to 12 minutes or until the edges of the cookies begin to turn golden brown. For best results, rotate the pan half way through. Remove fro the oven, let cool on the baking sheet for two minutes, and then transfer to a cooling rack to cool completely.
Enjoy right away or store in an airtight container for up to 1 week.

1 cup raisins (150g)
1 cup of unsalted butter (227g)
1 cup of brown sugar (light or dark) (200g)
1 cup of white granulated sugar (200g)
1 tsp of vanilla extract (4ml)

How to make oatmeal cookies – Easy Oatmeal Raisin Cookie Recipe
Hello and welcome back to in the kitchen with matt; I am your host Matt Taylor. Today we are making oatmeal cookies mmm, yummy; I had a request from someone to make oatmeal cookies, so that is what we are going to do. For the tools and ingredients what I will do is put a description, in the description down below that will have all the amounts listed. Let’s get baking, ok first what we are going to do is we are going to crack our eggs, and put them in this bowl, ok now we are going to go ahead and whisk these up real well. Ok after you have your eggs beaten, what we are going to do is we are going to add our raisins to the egg mixture. Ok and we are going to go ahead and soak these, so we are going to let these soak for about a half hour. And what it is going to do is it is going to keep the raisins nice and soft, when they are baking in the oatmeal cookies, pretty cool, otherwise, what happens is the raisins tend to dry out, and they get burnt, and things like that, and they don’t taste very good. So that is what we are going to do, we will just leave this here, for 30 minutes. Once we have soaked the raisins lets go ahead and preheat the oven to 350 degrees. Now lets go ahead and cream the butter with the sugars, and our vanilla extract. Now to our flour we will just go ahead and add our cinnamon, our baking soda, and our salt. We will go ahead and whisk that together a little bit, you can also sift it all together if you like. And now what we are going to do go ahead and add this little by little to our mixture. Ok then after about half of the flour has been added, we are going to go ahead and add our raisins and our egg. And at this point we are going to do everything the rest of it by hand, clean the beaters. And go ahead and take a wooden spoon and let’s go ahead and just hand mix everything now. We will add some more of the flour. Try not to get it everywhere. The rest of our flour, and we will also add in our oatmeal. And we want to mix it all together. All right and once we are done we will have quite a bit of cookie dough here, enough to make a lot of cookies. And I just usually take a tablespoon and come in here and just form it into a little cookie shape like that, and go ahead and put it on an ungreased baking sheet. Whatever size you want, ok and then when you are done, putting them on the baking sheet, go ahead and bake them for 10 to 12 minutes until they are nice and golden brown. Okay and when they are done they will look like this. Go ahead and let them sit and cool. And you can put them on a cookie rack if you want. All right and that is how you make oatmeal cookies, mmm, awesome, really easy to do, if I can do it, you can do it. Best Oatmeal Raisin cookies recipe
Best ever!
Ingredients:
Soak 1 cup (155g) raisins in a bowl with 3 beaten eggs, 1 t Vanilla and 1 t Cinnamon for one hour.
In a separate bowl, cream 1 cup (240g) butter with 1 cup (220g) brown sugar and 1 cup (200g) white sugar.
Add 1 t salt and 2 t baking soda.
Stir in 2 1/2 cups ( 350g) flour.
Add the raisin mixture. Mix again.
Add 2 cups (200g) regular rolled oats or quick oats. If you use old fashioned oats, then “pulse” in a food processor/ blender 5-7 times for best results. Pulsing the oats will make them “finer”, therefore they will cook faster like quick oats.
Optional 3/4 cup (68g) walnuts or pecans.
Bake 350*F or 180*C
10-12 minutes
