How To make Pumpkin Waffles
1 c Canned pumpkin puree
1 c Sour cream
1 c Milk
4 Eggs; separated
8 tb Unsalted butter; melted
1/4 c Packed dark brown sugar
1 3/4 c All-purpose flour
2 ts Baking powder
1/2 ts Baking soda
1/2 ts Salt
3/4 ts Cinnamon
1/4 ts Freshly grated nutmeg
GARNISH:
Sour cream Honey Chopped pecans Raisins Whisk together pumpkin, sour cream, milk, egg yolks, melted butter and brown sugar in a mixing bowl and reserve. In another mixing bowl combine the flour, baking powder, baking soda, salt, cinnamon and nutmeg. By hand, stir the dry ingredients into the liquid, and reserve. In a separate bowl, beat the egg whites until soft peaks form. Whisk one third of the beaten whites into the batter to lighten it. Then fold in the remaining whites. To make waffles, follow the manufacturer's instructions on your waffle iron. Serve with maple syrup or top each with a dollop of sour cream and a sprinkling of pecans, raisins and honey. BETH'S SPICED PUMPKIN WAFFLES
Makes 12 waffles
INGREDIENTS:
1 ¾ cup (210g) flour
1 tbsp(7g) baking powder
½ tsp (2.5ml) baking soda
1 tbsp (7g) pumpkin pie spice*
3 tbsp (38g) sugar
½ tsp (2.5ml) salt
1 cup (240ml) milk
7 tbsp (105 ml) melted butter
1 egg
1 tbsp (15ml) vanilla
1 cup (240ml) canned pumpkin (pure pumpkin puree)
¾ cup (180 ml) club soda or sparkling water
¼ cup chopped pecans (for garnish)

Homemade Whipped Cream
1 cups heavy whipping cream
1 tbsp powdered sugar
½ tsp vanilla
METHOD:
In a large bowl whisk together the flour, baking powder, baking soda, pumpkin pie spice, sugar and salt. Then add milk, melted butter, egg, vanilla, pumpkin puree and club soda. Mix to combine.
Lightly grease waffle iron with melted butter. Once iron is hot, ladle just a small amount of batter so that it doesn’t fill the well, this will give you nice irregular edges (like the picture). Once done, pile 3 waffles to a plate, top with a dollop of whipped cream and chopped pecans.
For Whipped Cream: Place all ingredients in the bowl of an electric mixer and whip until soft peaks form.
