How To make Pumpkin Spiced Cake2
8 tb Butter, softened
1 c Brown sugar
2 1/2 c Sifted cake flour
1/2 ts Salt
2 1/2 ts Baking powder
2 Eggs
1/3 ts Baking soda
3/4 c Buttermilk
1 t Ground cinnamon
1/3 ts Ground allspice
1/3 ts Ground ginger
1 3/4 c Pumpkin puree
2/3 c Pecans, finely chopped
1 c Heavy cream
1 t Confectioners sugar
1/2 ts Vanilla extract
Cream the butter and brown sugar together until light and fluffy. Add the eggs, one at a time, blending well after each addition. Sift the flour, baking powder, baking soda, salt, cinnamon, allspice, and ginger together twice. Add the sifted flour and spices to the egg mixture, then add the buttermilk and mix well. Add the pureed pumpkin and the chopped pecans and blend thoroughly, scraping the sides and bottom of the bowl to ensure proper mixing. Divide the batter equally between two buttered and floured layer-cake pans and bake in a preheated 350 degree oven for approximately 25 minutes, or until a tester inserted through the
center comes out clean. Cool the layers for 10 minutes. Remove them from the pans and place them in the refrigerator for 45 minutes, or until cold. Whip the cream, vanilla extract and confectioners sugar together until peaks form. Place first layer of cake on cake platter, cover with half of the whipped cream. Recipe: Easy Pumpkin Spice Cake
1(15oz) can pumpkin puree
1(12oz) can evaporated milk
3 large eggs
1 cup sugar
1t ground cinnamon
1 box spice cake mix
1 cup butter, melted
Preheat oven to 350* . Spray a 9x13 baking dish with cooking spray. In a bowl, combine the pumpkin, milk, eggs, sugar and cinnamon to well combined. Pour into the baking dish. Sprinkle dry cake mix on top of pumpkin mixture. Then pour melted butter over the top of the cake mix. Bake at 350* for 55-60 minutes. It might still be jiggly in the middle, when it is done. Let stand for 30 minutes or more before serving.

This easy pumpkin spice earthquake cake starts with a spice cake mix and has a creamy cheesecake layer swirled in the cake batter. Top with a few chocolate chips for a delicious easy pumpkin dessert.
WHAT IS EARTHQUAKE CAKE?
An earthquake cake is an easy cake recipe that starts with a boxed cake mix. Why is it called earthquake? The cake mix bubbles up around the cream cheese layer as it bakes and creates a “lumpy” surface with cracks and crevices and looks all kinds of delicious. With earthquake cakes, the possibilities are endless because there are so many flavors of cake mixes!
HOW TO STORE EARTHQUAKE CAKE
Because this cake has a cream cheese layer, it’s best to store it in the refrigerator. Allow the cake to cool completely, cover it and then pop it in the fridge.
Ingredients
Cake Batter:
1 box Betty Crocker Spice Cake Mix
3 large eggs
1 cup pumpkin puree (canned)
¾ cup water
½ cup vegetable oil
1/3 cup granulated sugar
2 teaspoons pumpkin pie spice
Cream Cheese Filling:
8 ounces cream cheese (room temperature)
1/2 cup unsalted butter (melted)
3 cups powdered sugar
1/2 cup chocolate chips
Instructions
Preheat oven to 350 degrees. Spray a 9x13 baking pan with non-stick spray.
In a large bowl, mix together the cake mix, pumpkin, eggs, water, oil, sugar and pumpkin pie spice. Pour batter into the prepared pan.
In another bowl, melt the butter and mix together with the room temperature cream cheese. Stir in the powdered sugar and mix until well combined.
Place spoonfuls of the cream cheese mixture all over the top of the cake mixture. Using a knife, gently swirl through the cream cheese. Sprinkle chocolate chips on top and bake for 40-50 minutes or until center is set.
Allow the cake to almost completely cool before cutting. If you cut before it cools, the cake will be very soft and won't cut cleanly.
Store in an airtight container in the refrigerator.
