This makes 1 large Pumpkin Spice Bundt Cake or one small (7 inch) Bundt cake with one dozen cupcakes as shown in the video (plus one layer 6 inch round, not shown in the video)
1 cup raisins with 1/2 cup orange juice simmered on the stovetop for ten minutes
All ingredients for the cake :
1 cup butter
1 + 1/4 cups sugar
1/2 cup packed brown sugar
1 + 3/4 cups pumpkin puree
4 eggs
1/2 cup buttermilk
3 cups all purpose flour
1 tsp baking soda
2 tsp baking powder
1/2 tsp ginger
1/2 tsp allspice
1/2 tsp nutmeg
2 tsp cinnamon
1/2 tsp salt
Ingredients for the Caramel glaze
1/2 cup brown sugar
1/4 cup butter
1 tsp water
1 cup sweetened condensed milk

Hi guys, I prepared this yummy PUMPKIN SPICE LATTE MUG CAKE! Check out this simple and quick recipe! You will need only few ingredients for this recipe. This one is my favorite late night snacks :)
Here is how to make this mug cake:
6 tbs Spice Cake Mixture
3 tbs Pumpkin Pure
1 tbs Water
Whipping Cream
caramel bites for decoration
Mix well and heat it up for one minute in microwave. Don’t forget to top it with whipping cream and caramel bites. That’s it :D

Pumpkin Magic Cake
350°
Cake
1 Box Yellow Cake Mix
3 Eggs
1 C Milk
1/2 C Vegetable Oil
Pumpkin Filling
15 oz Can Pumpkin
1/2 C Evaporated Milk
1/2 C Heavy Cream
3 Eggs
1 C Brown Sugar
1 tsp Pumpkin Pie Spice
Frosting
1 Box Instant Vanilla Pudding
1 tsp Pumpkin Pie Spice
1 C Milk
8 oz Tub Cool Whip
Make cake mix and spread in a 13 x 9 pan coated with cooking spray. - DO NOT BAKE -- Set aside.
In medium size bowl, mix pumpkin, milk, heavy cream, eggs, brown sugar & pumpkin spice uuntil well blended.
Pour evenly over cake mix.
Bake 50 - 60 minutes or until middle is no longer jiggly. Let cool completly.
To make frosting.
Mix pudding mix, milk & pumpkin spice until thick. Beat in cool whip.
Spread evenly on cake.

INGREDIENTS
Pumpkin Cake
1 box white cake mix
1/2 cup vegetable oil
1/2 cup water
1 cup pumpkin puree
1/2 cup brown sugar
1 tsp pumpkin pie spice
1/2 tsp ground cinnamon
1/8-1/4 tsp ground allspice
1 tsp vanilla extract
3 eggs
Cream Cheese Filling
8 oz cream cheese at room temperature
3 cups powdered sugar
1/2 cup butter melted
Additional Ingredients
1 cup pecans
1 cup shredded coconut sweetened
1/4 cup milk chocolate chips optional
1/4 cup butterscotch chips optional
DIRECTIONS
Preheat oven to 350 degrees and grease a 9x13 baking pan.
Sprinkle coconut and pecans over the bottom of the baking pan. Set aside.
In a bowl, mix cake mix, vegetable oil, water, pumpkin brown sugar, pumpkin pie spice, cinnamon, all spice, vanilla extract and eggs together. Mix until well combined. Pour batter over the coconut and pecans.
In a separate bowl, whisk (by hand or with a mixer) cream cheese, melted butter, and powdered sugar together. Once combined, dollop spoonfuls of the mixture on top of the pumpkin cake batter.
Using a knife or toothpick, swirl the cream cheese and pumpkin cake together.
Sprinkle chocolate chips and butterscotch chips on top and swirl the chips in with the cake.
Bake for 35-36 minutes. The cake should be set on top but the center should still jiggle lightly when the cake pan is gently tapped.
Allow to cool before serving. Due to the cream cheese in the cake, I prefer to eat this cake cold, but it can be eaten warm or at room temperature as well.
Store leftovers in the fridge.
