How To make Pumpkin(Or Squash) Spice Cake

CAKE:
1/2 c Butter
1 c Firmly packed brown sugar
2 Eggs
3/4 c Pumpkin sieved and cooked
Or winter squash 2 c Cake flour :
sifted
1/2 ts Baking soda
1 1/2 ts Baking powder
1/2 ts Salt
1/2 ts Cinnamon
1/2 ts Nutmeg
1/2 ts Allspice
1/2 ts Ginger
1/2 c Buttermilk or sour milk
(or stir 1 1/2 tsp vinegar -into 1/2 cup sweet milk and -allow to stand 10 minutes) 1/2 c Nuts -- chopped and toasted
-(walnuts, pecans, filberts) CARAMEL FROSTING:
2 c Dark brown sugar -- firmly
-packed 1 1/3 c Light cream
3 tb Butter
1/8 ts Salt
1/2 ts Vanilla
In a mixing bowl, cream the butter well, then cream in the sugar until fluffy. Beat in the eggs and the pumpkin. Sift the dry ingredients together and stir in alternately with the milk. If using an electric mixer, add the dry ingredients and milk and turn to lowest speed; push down the batter from the sides of the bowl with a rubber spatula, and mix just until the batter is smooth. Add the nuts and turn into a greased and floured sheet cake pan 11x14x2 inches or two 8 or 9-inch layer cake pans, greased and floured. Bake in a preheated 350 degree F. oven about 35 minutes for a sheet cake or 25 for layers, or until the cake springs back when pressed lightly in the center. Cool 5 minutes on a rack, loosen from the pan, and turn out onto the rack to cool. Frost with Caramel Frosting. FROSTING: In a saucepan over low heat, bring the sugar and cream to a boil. Cover the pan and cook the mixture 3 minutes. Remove the cover and continue cooking until the mixture reaches 236 to 240 degrees. Remove the pan from the heat and stir in the butter, salt, and vanilla. Cool to lukewarm, then beat until the mixture is creamy smooth and of spreading consistency. Quick tips:
When the recipe calls for only 3/4 of a can of pumpkin, you can easily but the rest in a freezer bag or in container and stick it in the freezer!
Want to use fresh pumpkin?
Fresh pumpkin and canned pumpkin work a little differently.
Fifteen ounces of canned pumpkin is just shy of 2 cups (16 ounces would be 2 cups).
A 3-pound pumpkin (meant for pie) will likely give you enough puree for your recipe.
Here are some good tips for using fresh pumpkin: Pumpkin math: After cooking and draining, this is about what to expect from a typical cooking pumpkin.
2-1/2 pound pie pumpkin = 1 3/4 cups puree 3 1/2 pound pie pumpkin = 2 1/2 cups puree 6 pound carving pumpkin = 2 3/4 cups puree 5 pound round pumpkin = 3 1/3 cups puree.

TODAY'S RECIPE IS Pumpkin Butter Cake | Super Moist Pumpkin Pound Cake | Yummy
INGREDIENTS:
100 gm pumpkin
Steam for 10 mins
Let it cool down
Mashed well
Butter 1/4 cup
Sugar 1/2 cup
Mix well
2 eggs (one at a time)
Vanilla 1 tsp
All purpose flour 1 cup
Baking powder 1 tsp
Baking soda 1/2 tsp
Milk 1/2 cup
7 inch pan
Grease butter
Place baking paper
Pumpkin on top
Sesame seeds
Bake in a preheated oven at 170c for 30-40 mins
NOTE: 1 CUP = 250 ML

▢2 cups cream cheese frosting, or topping of choice
Instructions
Preheat the oven to 350F.
Put all the ingredients except the frosting in a large bowl.
Stir together with a large spoon until smooth.
Spoon into a 13x9-inch pan that has been buttered or sprayed with baking spray.
Bake 30 minutes or until a toothpick inserted in center comes out clean.
Cool and top with the cream cheese frosting or your favorite topping.
