six (6) muffins, yes six muffins), equals the following WW Exchanges: 1 Bread, 1 Fruit, 1 Milk, 1 Protein and 1 1/2 Vegetables. This is a no fat recipe! You may substitute Egg Beaters for the eggs and Equal for the Sweet and Low. Freezes well.

Pumpkin Harvest Muffins
Serves 20
3 SP
1 box sugar free Pillsbury yellow cake mix
1 cup pumpkin puree
1/2 cup unsweetened applesauce
2 eggs
1 apple – peeled, cored and chopped
1 Tbl pumpkin pie spice
¼ cup reduced sugar craisins
¼ cup pepitas
¼ cup chopped walnuts
1. Bake your muffins at 325 degrees for about 20 minutes until done.
This made 20 muffins for me!

PUMPKIN SPICE MUFFINS
1 box Pillsbury Sugar Free Yellow Cake Mix
1 can 100% Pure Pumpkin
1/2 cup unsweetened applesauce
1/2 cup water
1 tsp pumpkin pie spice
1/2 tsp ground cinnamon
2 egg whites (or if using box egg whites 3-4 tbsp)
Combine all ingredients in bowl and mix well. Pour into muffin tins (lined and/or sprayed with cooking spray) Bake at 325 for 20-25 minutes. Freeze and reheat whenever!

These Pumpkin Muffins are stuffed with cranberries and full of warm spices. They are definitely my favorite pumpkin muffin recipe to date and make for a cozy breakfast, snack or dessert.
Healthy pumpkin muffins are made with wholesome ingredients and are low carb, gluten-free, paleo and absolutely delicious. They require just 1 bowl and about 30 minutes. The ingredients list is also really simple, with the basics being coconut flour, maple syrup, eggs, pumpkin, pumpkin pie spice, coconut oil, and cranberries.

PUMPKIN MUFFINS | healthy, paleo muffin recipe
6 eggs beaten
1/4 cup pumpkin purée
1/2 cup melted coconut oil
1 tsp. vanilla
1/4 cup maple syrup
1/2 cup coconut flour
1/2 tsp. salt
1/4 tsp. baking soda
1 tbsp. pumpkin pie spice
1/2 cup fresh cranberries
INSTRUCTIONS
Preheat oven to 350 degrees.
Whisk together the eggs, pumpkin, butter, vanilla extract, and maple syrup.
Add in coconut flour, sea salt, baking soda, and pumpkin pie spice and stir until everything is well combined. Gently fold in cranberries.
Divide batter into a 12-count muffin tin that is either lined with muffin cups or sprayed with cooking spray. Pop in the oven and bake for 35 minutes. Enjoy.
NOTES
I love serving these muffins toasted with a schmear of cream cheese on top. It makes for a delicious breakfast along side a cup of coffee.

Set your oven to 325.
1 pack sugar free yellow cake mix
3-4 tbl spoons of egg whites
1/2 cup unsweetened apple sauce
1/2 cup water
1 tsp pumpkin pie spice
1/2 tsp cinnamon.
1 can (15oz) pumpkin puree
Bake for 15-20 min depending on your oven. Check with a tooth pick to make sure they are cooked through.
Optional- drizzle some sugar free icing, or melted sugar free chocolate chips! YUM!

Hey guys! Todays video is just a quick and easy recipe for some weight watchers low fat pumpkin muffins. I ended up getting 18 muffins total for 2 points each. Just a reminder I am following the my WW green plan and get 52 points in a day because I am currently breastfeeding.
Pumpkin muffins:
1 box of sugar free vanilla cake mix- 38 points for the whole box
1 can of Lillys pumpkin puree- 0 points
1 cup of the Mott's no sugar added cinnamon apple sauce- 0 points
1/4 cup of water
a little bit of cinnamon and pumpkin pie spice
mix it all together and put it in muffin tins and cook according to the box directions- 325 degrees for 19-23 min

Recipe

1/2 cup of unsweetened apple sauce
2 large egg whites
10 oz pure pumpkin purée (NOT FILLING)
Bake at 350 for 20-23 minutes
Add dark chocolate (optional!)
