How To make Pumpkin Muffins
1 c Unbleached Flour, Sifted
2 t Baking Powder
1/4 t Salt
1/4 t Ground Cinnamon
1/4 c Vegetable Shortening
2/3 c Sugar
1 ea Large Egg
1/2 c Canned, Mashed Pumpkin
2 T Milk
Sift together flour, baking powder, salt and cinnamon; set aside. Cream together shortening and sugar in mixing bowl until ight and fluffy, using electric mixer at medium speed. Beat in egg. Combine pumpkin and milk in small bowl. Add dry ingredients alternately with pumpkin mixture to creamed mixture, stirring well after each addition. Spoon pagger into paper-lined 2 1/2-inch muffin-pan cups, filling 2/3rds full. Bake in 350 degree F. oven 20 minutes or until golden brown. Serve hot with butter and homemade jam.

✅ TIPS
Enjoy them while warm or once completely cool down, either way these muffins are delicious and stay moist up to 5 days
✅sift all ingredients after mixing them together the sugar goes through better ???? you want the dry ingredients to be as smooth as possible
✅you can get 6-8 jumbo muffins or 12 regular size muffins
✅bake at 350 for 25 minutes
Ingredients:
For the batter:
Mix the dry ingredients-
1 3/4 cup APF (all purpose flour)
1 cup sugar
1/2 cup brown sugar
1 1/2 tsp pumpkin pie spice
1/2 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
Wet ingredients-
15 oz 100% pure pumpkin
1/2 cup oil
2 eggs
1 tsp vanilla
1/4 tsp pumpkin pie spice extract(optional)
Cream cheese mixture-
8 oz cream cheese
4 tbsp sugar
2 tbsp APF
1 tsp vanilla
1 tbsp milk
Pinch of salt

BAKED PUMPKIN SPICE OATMEAL MUFFIN CUP RECIPE
3 cups rolled oats
1 teaspoon baking powder
1.5 teaspoon pumpkin pie spice
1/2 teaspoon kosher salt
1/2 cup pumpkin puree
1/4 cup maple syrup
2 pastured eggs
1.25 cups milk (I used almond but you can use any you milk you prefer)
1/4 raisins
1/4 pecans
Pre-heat oven to 350 F and grease a 12-cup muffin tray (I used cooking spray to keep it easy but you can use butter or coconut oil as well).
In a large bowl combine all of the dry ingredients; rolled oats, baking powder, pumpkin pie spice, and kosher salt. Mix well and set a side.
In a medium bowl, combine pumpkin puree, maple syrup, eggs and milk. Whisk together and then pour the wet ingredients in to the dry and stir until well combined.
Gently mix in the pecan and the raisins and allow to sit for 5 minutes to allow the dry oats to absorb some of the liquid.
Evenly divide the mixture amongst the muffin cups and pop in the oven for 20-25 minutes or until cooked through and golden brown over the top.
Cool and enjoy!
