How To make Pumpkin Muffins(A&M)
2 1/2 c AM Whole Wheat Pastry Flour
1/2 c AM Wheat Bran
3 ts Non-alum baking powder
1 t Cinnamon
1/2 ts Nutmeg
1/4 ts Cloves
1 t Sea salt (optional)
1/2 c Chopped nuts
2 Eggs
1/4 c AM Unrefined Sunflower Oil
1/2 c Honey
2 c Pumpkin puree
-- (2 c. ?ne 16 oz. can) 1 t Grated orange rind
1 c Raisins
1/2 c Chopped pitted dates
Combine dry ingredients. In a separate bowl beat eggs, add oil, honey and pumpkin. Combine the mixtures, then add the orange rind, raisins and dates. Stir till all dry ingredients are moistened. Fill oiled muffin tins 2/3 full. Bake at 375 F. for 30 minutes for large muffins or 20 minutes for mini-muffins. Allow to cool 5 minutes before removing from the pan. These foundation cookies are the basis of a great cookie, just like the College of Liberal Arts is the basis of a great education. Learn how to make them here! Recipe below.
Ingredients:
3 cups flour
1 tsp. baking soda
1tsp. salt
1 cup butter
1 cup granulated sugar
1 cup packed brown sugar
2 eggs
1 tsp. vanilla (2 tsp. if you love the flavor of vanilla!)
2 cups total of your favorite cookie add-ins (chocolate chips, candy, nuts, dried fruit, coconut, crushed up Oreos, pretzels, caramel)
Instructions:
In a large bowl, whisk flour, baking soda, and salt to combine. When the mixture is light and fluffy, set aside.
With an electric mixer, cream together butter and sugar. Add eggs and vanilla beating on medium until just combined.
Gradually add flour mixture to butter and sugar mixture. Thoroughly mix and remove the mixing bowl.
With a wooden spoon or strong handled rubber spatula, stir in a total of 2 cups of your favorite cookie add-ins. (We used dried cranberries and white chocolate chips to make a maroon and white polka-dot cookie.) Cover dough and allow it to rest in the fridge for two hours or overnight.
Preheat oven to 375°F. Gently roll one tablespoon of dough into a perfectly round ball. Repeat until you’ve filled a cookie sheet with dough balls spaced evenly apart with room for cookies to spread. Bake 12-15 minutes or until lightly browned. Cool slightly before removing from baking sheet.

Add-in Variations:
Maroon and White - Add one cup of dried cranberries and one cup of white chocolate chips to your foundation cookie dough.
Cookie Monster - Add a little blue food coloring to your butter and sugar and two cups of roughly chopped Oreos to your foundation cookie dough.
Chocolate Chip Cookies - Add two cups of chocolate chips or one cup of chopped nuts and one cup of chocolate chips to your foundation cookie dough
White Chocolate Macadamia Nut - Add one cup of white chocolate chips and one cup of chopped macadamia nuts to your basic cookie dough
Candy Shop - Add one half cup chopped peanut butter cups, one half cup chocolate covered caramels, one half cup chopped cookies ‘n cream candy bar, and one half cup Snickers to to foundation cookie dough.
Texas A&Mmmm - Add two cups of your favorite M&M’s to basic cookie dough.

For Girl Scouts, we had a project that required making some better-for-you meals. Someone then thought it would be fun to turn it into a cooking show. Soon, I threw in the idea to film it! Here you go!

100g pumpkin purée
180ml unsweetened almond milk
I sprinkled over some peanut butter powder, some sugar free syrup and nush cream cheese mixed with a sweetener
Wednesday - pumpkin doughnut balls
60g flour
30g vegan protein powder - I used the salted caramel soy isolate by my protein (link and discount code can be found below)
80g pumpkin purée
5g chia seeds
Served with Biscoff spread and fresh berries
Thursday - breakfast on the go - pumpkin yogurt pot
Some yogurt
Granola
Banana slices
Pumpkin protein balls: 100g pumpkin puree mixed with 30g vegan protein powder
*refridgerate overnight*
Friday - breakfast on the go - pumpkin chia pot
40g chia seeds
40g protein powder
250ml unsweetened almond milk
100g pumpkin purée
Cinnamon
Topped with pumpkin cereal and pumpkin marshmallows
