1 c Shortening
1 c Sugar
1 c Pumpkin; cooked
1 Egg
1 ts Vanilla
2 c Flour; sifted
1 ts Baking powder
1/2 ts Baking soda
1/2 ts Salt
1 ts Cinnamon
1/2 ts Allspice
1 c Nuts; chopped
1 c Raisins
Recipe by: Sam Waring A spicy cookie with a mealy, rather unusual texture. Preheat oven to 375 F. Cream together shortening and sugar. Add and mix well the pumpkin, egg, and vanilla. Sift together and add to the above mixture flour, baking powder, baking soda, salt, cinnamon, and allspice. Stir in raisins and nuts. Drop cookies onto a well-greased cookie sheet and bake about 15 minutes. -----

PUMPKIN CHOCOLATE CHIP COOKIES
INGREDIENTS:
• 225 g unsalted butter
• 1 cup (200 g) brown sugar
• 1/2 cup (100 g) granulated sugar
• 1 tsp vanilla extract
• 175 g (3/4 cup) pumpkin puree
• 1 tbsp ground cinnamon
• 1/2 tsp ground nutmeg
• 1/2 tsp ground cloves
• 1 tsp ground ginger
• 1/2 tsp salt
• 1/2 tsp baking powder
• 1/2 tsp baking soda
• 410 g (3 cups) all-purpose flour
• 200 g (1 cup) chocolate chips (I use a mix of milk and dark), plus more for topping
• chopped nuts, optional
INSTRUCTIONS
• To make your own pumpkin puree, just roast a pumpkin (at 200 C, 375 F) until soft, for me it takes about 35-40 min. Let it cool, then scoop the flesh and blend. Use for all fall baking.
• For the cookies, place the butter in a saucepan and place over medium-low heat. Let it melt then brown, will take 5-8 min. It will release a delicious, nutty aroma. Let the butter cool completely.
• Pour the butter into a bowl, and mix with the sugars. Add the vanilla, pumpkin puree, spices, salt baking powder and baking soda.
• Then add the flour, followed by the chocolate chips and nuts if using. The dough will be quite sticky. Cover with cling wrap and refrigerate at least 1 hour, overnight is fine too.
• Scoop into 1.5 tbsp balls, then add extra chips on top. Place on a parchment lined baking sheet and bake in a preheated 180 C or 375 F oven for 10-11 min or until the edges are golden, the middle has set. Let the cool for 5 min on the tray, then transfer to a cooling rack and let cool completely.
• Enjoy! Makes around 36.
