How To make Felicia's Pumpkin Cookies
2 c Butter, softened (4 sticks) 2 c Sugar 2 Eggs 2 c Mashed cooked
pumpkin (or - canned) 2 ts Vanilla 5 c All-purpose flour 2 ts Baking powder 1 ts Baking soda 4 ts Ground cinnamon 2 ts Ground cloves 2 ts Ground nutmeg 1 ts Salt 2 c Raisins 2 c Chopped walnuts Preheat oven to 375 F. Cream together the butter and sugar until smooth. Beat in the eggs one at a time. Add the pumpkin and vanilla, blending well. In a separate bowl, combine the flour, baking powder, baking soda, cinnamon, cloves, nutmeg, and salt. Add to the creamed mixture, stirring well. Mix in the raisins and nuts. Drop by spoonfuls onto greased cookie sheets and bake in a preheated 375 F oven for 10 to 15 minutes.

BEEF ENCHILADAS
I just fill each tortilla with 2oz lean beef, sprinkle of cheese and a little sauce...roll up and place in baking dish (put sauce in baking dish so tortillas don’t stick). Top with more sauce and cheese. Bake at 350 for 20 min. So good!
-1 can Red enchilada sauce
-1lb 96/4 lean ground beef
-1 and 1/4 cups FF cheddar cheese
-1 point tortillas (ole extreme wellness are my fav)

Need:
12 cup muffin tray
Parchment muffin cup liners.
3.5T Coconut Oil
Ingredients
Dries:
1/8 t Ground Nutmeg
1/4 t Ground Ginger
1/8 t Ground Allspice
2 ½ t Ground Cinnamon
1 ¼ Kosher Salt
½ t + 1/8 t Baking Soda
1T+ ½ t + 1/8 t Aluminum Free Baking Powder
¼ C Potato Starch
¼ C Brown Sugar
3/4 C + 1 T Evaporated Cane Juice
2 C Brown Rice Flour (sifted)
Wets:
2 Eggs
¼ t Pure Vanilla Extract
1¼ C + 2½ T Pumpkin Puree
½ C + ½ t Rice Milk
Directions
1. Preheat oven to 425. When ready to bake reduce to 350.
2. Measure coconut oil into small glass bowl and microwave until completely liquid, set aside.
3. Combine ingredients listed under “Dries” in mixing bowl and whisk thoroughly.
4. In separate bowl, with hand mixer, combine all ingredients listed under “Wets”.
5. Add “Wets” to the “Dries” and mix on medium until just combined.
6. Add coconut oil to mixture and mix on medium until just absorbed.
7. Fill muffin cups almost to the brim and bake.
Regular muffins: 29-31 minutes; mini muffins: 14-17 minutes; loaf (use ½ the batter, 8 ½” x 4 ½” loaf pan) grease pan or line with parchment: 44-46 minutes. Done when tops are firm and have browned slightly around edges and cracking is present.
Will last 3-4 days on the counter in covered container. Muffins can be frozen.
Batter can be frozen in portions. Defrost batter in refrigerator. When defrosted (do not allow to come to room temperature), stir batter and place into muffin cups as above.
