Katie's Pumpkin Spice Latté Recipe

Pumpkin Chocolate Chip Cookies:
2 Cups Flour
1 Cup Oats (Quick or Old Fashioned)
1 Tsp Baking Soda
1 Tsp Ground Cinnamon
1/2 Tsp Salt
1 Cup Butter, Softened
1 Cup Firmly Packed Brown Sugar
1 Cup Sugar
1 Egg, Slightly Beaten
1 Tsp Vanilla
1 Cup Libby's Solid Pack Pumpkin
1 Cup Chocolate Chips of your choice
Preheat your oven to 350 degrees. Combine first 5 ingredients. In a separate bowl or with a mixer, cream butter and sugars. Beating until light and fluffy. Beat in egg then add vanilla. Mix Well. Alternate adding dry ingredients and pumpkin. Mix until just incorporated. Add chocolate chips. Bake on a lined baking sheet for 15-18 minutes. Pull out just before they lose that shine. Enjoy! Makes 4 dozen cookies.

FOR THE COOKIES
- 2 1/2 cups flour
- 5 tablespoons sugar
- 1 teaspoon salt
- 16 tablespoons cold butter, cut in small pieces
- 2 egg yolks
- 5-7 tablespoons ice water
FOR THE PUMPKIN PIE FILLING
- 1 cup pumpkin purée
- 3/4 cup evaporated milk
- 1 egg
- 1 teaspoon vanilla
- 1/3 cup sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground ginger
- 1/8 teaspoon ground cloves
FOR THE COOKIES
Preheat oven to 375 degrees.
In a food processor, pulse together the flour, sugar, and salt until combined. Add butter and pulse until butter is cut into small pieces no larger than the size of peas. Then add egg yolks.
Place on lid and with the processor running, dribble in water until the dough clears the sides and forms ball. Wrap dough in plastic and form into a disk. Place in refrigerator and chill at least 30 minutes.
Once chilled, remove from refrigerator and roll dough out on a lightly floured surface to 1/4 inch thickness.
With a biscuit cutter, cut three-inch round cookies and place half of the cookies on a parchment-lined baking sheet.
Brush cookies with 1 egg white mixed with 1 teaspoon water.
With the other half of the cookies, create a frame by cutting the middle with one size smaller biscuit cutter.
Place frame on the egg-washed cookie, sprinkle with sugar and bake in the preheated oven for 15 minutes.
While baking, make the filling by mixing together all the pumpkin pie filling ingredients until well combined.
When cookies are finished, remove from the oven. Cool for 5 minutes then fill with approximately 1 tablespoon of pie filling.
Return to oven and bake an additional 8-10 minutes until the filling is just set.
Remove and cool on pan for 5 minutes then on a cooling rack.

For pumpkin spice latte cookies:
1/2 c. unsalted butter room temp
1 c. packed brown sugar
1/2 c. sugar
1 large egg
2 tsp. vanilla
1 c. canned pumpkin puree
2 tsp. instant coffee granules
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. pumpkin pie spice
½ tsp. nutmeg
1/4 tsp. ginger
1/4 tsp. clove
3/4 tsp. baking soda
½ tsp. Baking powder
2 1/2 c. all-purpose flour
2/3 c. cinnamon chips
1/2 c. sugar
24 Werther soft chews (combine 2, to form 12 balls)
12 Pumpkin pie oreos
24 Mini pretzels
For pumpkin spice coffee glaze:
1 tsp. instant coffee granules
2 c. powdered sugar
3-5 tbsp. Pumpkin spice frappuccino
1 tbsp. melted butter
1 tsp. Pumpkin spice bakery emulsion
For pumpkin spice latte cookies:
In a large bowl, cream together butter, sugars, egg, vanilla, pumpkin, and instant coffee granules.
In a medium bowl, whisk together salt, cinnamon, pumpkin pie spice, ginger, clove, baking soda, baking powder and flour.
Add the dry ingredients to the wet ingredients, and stir until just combined.
Fold in cinnamon chips.
Chill cookie dough in the refrigerator for at least 2-3 hours, until firm, and preferably overnight. Do not skip this.
Line cookie sheets with parchment paper or silicone baking mats.
Scoop the dough by tablespoonfuls, and on top pretzels and press caramels in the center. Then top with another scoop of cookie dough.
Press another pretzels on the tops
Bake at 350 degrees for 16-18 minutes, or until edges are golden, and the centers appear set.
Remove from heat, and allow to cool on cookie sheets for 2-3 minutes before removing to wire racks to cool completely. They will continue to cook a bit on the sheets.
Once cool, drizzle with coffee glaze and top with a pumpkin pie oreo
For coffee glaze:
In a medium bowl, combine coffee granules, pumpkin spice frappuccino, pumpkin spice bakery emulsion and melted butter.
Add 2 c. powdered sugar, whisking until smooth.
Drizzle glaze over cooled cookies, and allow to set for 15-20 minutes.
