How To make Mom's Pumpkin Cookies
3 c Pumpkin
1 c Shortening
2 c White sugar
4 c Flour
2 ts Soda
2 ts Salt
2 ts Baking powder
2 ts Vanilla
2 Eggs
2 ts Cinnamon
1 lg Bag chocolate chips
1 Jar marichino cherries
-chopped Cream together pumpkin, shortening, white sugar. Then add and mix flour, soda, salt, baking powder. Then add and mix vanilla, eggs, cinnamon. Then add and mix chocolate chips, cherries, nuts. Drop by spoonful on greased cooie sheets. 12 - 14 minutes at 375~ -----

MIKAELA'S RECIPE:
Wet:
1 cup pitted dates
2/3 cup pumpkin puree
1/2 cup mashed banana
1/3 cup maple syrup
1 tablespoon vanilla extract
1/3 cup melted coconut oil
Dry:
1/4 cup tapioca flour
1 1/2 cup almond flour
1 cup chick pea / fava flour
2 teaspoons pumpkin spice
1 teaspoon fine sea salt
1 teaspoon nutmeg powder
1 1/2 teaspoon baking soda
1 1/2 teaspoon baking powder
Directions:
(1) Preheat oven to 350 degrees.
(2) Cover dates in boiling water and let sit for 10 minutes.
(3) Mix all wet ingredients into a large mixing bowl.
(4) Put all dry ingredients in a bowl and whisk.
(5) Strain the dates from the water. Do a rough chop of the dates, quarters or smaller. Add to wet ingredients.
(6) Fold the wet with the dry until all dry has been moistened.
(7) Grease an 8x8 pan with coconut oil and add the mixture to the pan.
(8) Place in oven rack for 30 minutes, test with a knife. If the knife is still wet, put in the oven for another 5 minutes.
(9) Remove and cool before slicing.

Spice Cake Mix Pumpkin Chocolate Chip Cookies
Spice cake mix is the perfect base for these delicious pumpkin chocolate chip cookies. The spices in the cake mix give the cookies a warm and fragrant flavor, while the pumpkin adds moistness and richness. With just a few ingredients, the result is a soft and chewy cookie that is studded with melty chocolate chips. These cookies are sure to become an autumn favorite!
Ingredients:
1 Can (15 ounces) Pumpkin Puree
1 Egg, beaten
1 Teaspoon Vanilla Extract
1 Spice Cake Mix
1 Teaspoon Pumpkin Spice, if desired
1 Bag of Chocolate Chips
How to Make Cake Mix Pumpkin Cookies
[1] In a large mixing bowl, combine the pumpkin puree, eggs, and vanilla extract.
[2] Add the extra pumpkin spice and the spiced cake mix to the wet ingredients and stir until combined.
[3] Gently stir in the chocolate chips. The dough will be sticky.
[4] Use a cookie scoop to measure the dough and drop the cookies onto a parchment-lined baking sheet about 2 inches apart.
[5] Bake in a preheated oven set to 350 degrees for 18-20 minutes, then remove and allow the cookies to cool on a wire rack.

1/2 cup Brown sugar
1/4 cup granulated sugar
1 egg
1 tsp vanilla
1/3 cup pumpkin purée
1 1/2 cup oats
Mix all together and make cookies bake at 350
