How To make Pumpkin Raisin Cookies
1/2 c Shortening
1 c Sugar
1 c Canned pumpkin
1 ts Vanilla extract
2 c All-purpose flour
1 ts Baking powder
1 ts Baking soda
1 ts Ground cinnamon
ds Salt 1 c Raisins
Frosting: 2 tb Butter or margarine
1 1/2 c Confectioner's sugar
2 tb Milk
1 ts Vanilla extract
Recipe by: TASTE OF HOME - OCT/NOV 95 In a mixing bowl, cream shortening and sugar. Add pumpkin and vanilla. Combine flour, baking powder, baking soda, cinnamon and salt; add to the creamed mixture and mix well. Fold in the raisins, Drop by teaspoonfuls onto greased baking sheets. Bake at 350 degrees for 12-14 minutes or until lightly browned. Cool on wire racks. For frosting, melt butter in a saucepan. Stir in the sugar, milk and vanilla until smooth. Frost cooled cookies. Yield about 3 dozen -----

1 Egg

200g Rolled Oats
100g Plain Flour
250g Sultanas/Raisins

Pumpkin Raisin Cookies

And just in time for the holiday season- these pumpkin raisin cookies are sure to be a family favorite.
Here's the recipe:
1 cup shortening
1 cup sugar
1 cup pumpkin puree
1 tsp vanilla
1 egg
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp ground ginger
1 tsp salt
1 cup raisins
Icing:
3 Tbsp. butter
3/4 tsp vanilla
1/4 cup milk
1/2 cup brown sugar
1 cup confectioners sugar
Mix ingredients in order listed. Mix dry ingredients last. Drop by teaspoon. Bake 10 -15 minutes at 350 degrees. Do not overbake. Frost cookies while warm.
Icing: combine and cook to boil butter, vanilla, milk and brown sugar. Stir in powdered sugar. Cool.
