1 teaspoon scoop:
Baking mats:

GREAT PUMPKIN COOKIES (The Peanuts Cook Book, 1969)
1 1/2c brown sugar, packed
1/2c shortening
2 eggs
1lb can of pumpkin (NOT pumpkin pie filling!)
2 3/4c flour
1Tbsp baking powder
1tsp cinnamon
1/2tsp nutmeg
1/2tsp salt
1/4tsp ginger
1c raisins
1c pecans
Preheat oven to 400 degrees. Mix sugar, shortening, eggs, and pumpkin thoroughly in a large bowl. Sift dry ingredients and add to pumpkin mixture. Blend well. Add raisins and pecans. Drop batter by teaspoonsful on ungreased baking sheets. Bake 12 to 15 minutes, or until lighly browned. Remove from oven and lift off with a pancake turner. Makes about 6 dozen. A delicious snack while you're waiting for the Great Pumpkin.
