How To make Pumpkin Burgers
1 1/2 lb Ground beef
1 md Onion, chopped
12 oz Jar of chili sauce
1/2 c Mashed cooked pumpkin
1 ts Salt
1 ts Pepper
1 ts Pumpkin pie spice
1 cn Condensed tomato soup
Combine ground beef and onion and brown lightly, breaking up meat with a fork. Add remaining ingredients. Cover and let simmer approximately 20 minutes; uncover and simmer 15 minutes longer until mixture is thick. Serve on buns. Randy Rigg

Pumpkin Spiced Pizza ????
To make a simple pumpkin spice pizza sauce, simply mix 3/4 cup canned pumpkin puree, 1/4 cup tomato paste, 3 cloves minced garlic, 1-2 tsp pumpkin pie spice (depending on how pumpkin spiced you want), plus salt to taste.
Pumpkin Spiced Burger ????
1 cup black beans, drained and rinsed
1 cup pumpkin puree
1/2 cup chopped pecans
1/2 cup rolled oats
1/4 cup diced green onion
1 cup cooked quinoa
2 tsp pumpkin pie spice
1/2 cup bread crumbs
Combine all ingredients in a large bowl until it's a thick, moldable mixture. Roll into 7-8 ball and flatten into patties onto a parchment lined baking tray. Bake for 40 mins at 400°F, flipping halfway.

Tasty Pumpkin Chickpea Burgers
On a weeknight I can throw these burgers together in about 5 minutes. Once they are pan fried dinner is on the table in around 10 minutes! I usually serve sweet potato fries or steamed veggies on the side.
You can try alternating the pumpkin for a couple of sweet potatoes or use a bit of both. The recipe is very lenient, you can vary the veggies used and amount used quite a bit and they still turn out great! Also try adding in a clove of garlic or add some of your favourite herbs or spices!
Note: Around every 3 days I roast quite a few veggies and store them in my fridge to make fast meals like this one during the week.
So bake some roast vegetables during your next meal prep! They are so useful for burgers, salads, muffins, pastas and the list goes on... !

BURGER RECIPE (makes 6-9 burger patties depending on how large and thick you make them):
2 pitted medjool dates (50g)
1.5 cups chopped fresh pumpkin (200g)
1 cup chopped carrot (130g)
1/2 cup chopped radish (60gm)
1/2 cup sun dried tomato
1 small sweet onion (150g)
1/4 cup fresh parsley
1/4 cup raw pumpkin seeds
3 cloves of garlic
2 tbsp fresh rosemary (save a sprig for decoration if you like)
1 tbsp miso paste (optional)
1 tbsp psyllium husk
1 tbsp whole chia seeds
1 tsp thyme
1/2 tsp mustard powder
1/2 tsp ground clove
1/2 tsp marjoram
1/2 tsp ground sage
1/4 tsp black pepper
1/4 tsp allspice
1/8 tsp cinnamon
SPICY HEMP SAUCE RECIPE:
1/4 cup lime juice
1/4 cup hemp seeds
4 pitted medjool dates
2 cloves of garlic
2 red hot Thai chilies (optional - use less or none depending on your spice tolerance)
1 tbsp nutritional yeast (optional - to give it a cheesy flavor)
1 tbsp apple cider vinegar
1 tbsp miso paste (optional)
1 jalapeno (take out the seeds and pith for less spice or use only half the jalapeno)
1 tsp onion powder
1/4 tsp mustard powder
1/4 tsp black pepper
1/4 tsp cayenne pepper (or start with 1/8 if you don't like it too spicy)
Water to consistency (start with 1/4 or 1/2 cup and only add more if you want it thinner)
FILLINGS
You need a head of iceberg lettuce for the bun
Fill with whatever you like! We will be using:
Sliced tomato
Sliced red onion
Sliced radishes
Microgreens
Fermented pickles
Ribboned cucumber
