I LOVE making dutch babies (puff pancakes) for breakfast when I'm trying to show off my skills without actually having to do anything hard. It only takes a few ingredients to make this but its so delicious and beautiful! Using apples and cinnamon gives this a Fall breakfast an extra kick of deliciousness.

Apple Pancake - German Apple Pancake
How to make German Apple Pancake using only one egg. The pancake will be thin.

You will need ovenproof skillet/pan, that can put in the oven.
Preheat oven at 225°C.
1 large egg
1 tsp grated lemon zest
A pinch of salt
40 ml milk
4 tbsp flour
1 tsp vanilla sugar or vanilla extract
1 tbsp granulated sugar
2 tbsp butter/margarine
1 small/half large apple, thinly sliced
Powdered sugar for dusting
Directions :
- In a bowl, whisk egg, grated lemon zest and salt. Add milk, whisk
to combined.
- Add the flour, whisk. Add vanilla sugar and granulated sugar into the batter. Whisk well.
- In an ovenproof skillet (I use square skillet here), heat butter until melt. Cook apple slices until softened.
- Pour pancake batter over the apple in the pan, spread evenly to cover the pan.
- Transfer the pan into the oven, bake at 225°C for about 20 minutes.
- The pancake will puffy during the baking time.
- Remove from oven, slide pancake onto serving plate. Dust with powdered sugar (may use fruits and syrup).
- Eat immediately.

3 tbsp unsalted butter

Powdered sugar for serving
Instructions:
Preheat your oven to 425°F (218°C).
In a 10-inch cast-iron skillet, melt the butter over medium heat.
In a mixing bowl, whisk together the flour, milk, eggs, sugar, vanilla extract, and salt until the batter is smooth and free of lumps.
Pour the batter into the skillet and cook for 1-2 minutes until the bottom is golden brown.
Arrange the apple slices on top of the pancake and sprinkle with cinnamon.
Place the skillet in the oven and bake for 10-12 minutes, until the pancake is puffed and golden brown.
Remove from the oven and sprinkle with powdered sugar.
Serve immediately.
Notes:
You can use any type of apple that you prefer in this recipe. Granny Smith apples work particularly well due to their tartness and firm texture.

1. Beat eggs in mixer. Add milk and beat. Add flour and salt, beat until combined.
2. Preheat oven to 425.When hot, melt butter in pan (about9x9). When it melts,
add apples and put back in oven until butter sizzles.
3. When butter is sizzling, pour in batter and sprinkle with sugar and cinnamon.
4. Bake 20 minutes and enjoy right away!
