Amazing Meatloaf Cake | Dinner
Birthdays are always accompanied by a birthday cake, but where does it say that the cake must be made of sugar, flour and eggs? Some people just don’t like dessert and this is for them!
Picture the juiciest meatloaf, the fluffiest mashed potatoes, the crispiest fried onions and the freshest green peas. Now picture them as a cake! I know this isn’t your traditional birthday cake but remember it doesn’t have to be your birthday to enjoy a nice slice of meaty cake!

3 Ingredient Meatloaf in a Muffin Pan | Real Life At Home
Arlene is sharing a super-easy recipe for meatloaf that uses only 3 ingredients! This is a great dish to make if you're pressed for time in the kitchen. When made in a muffin tin, it creates delicious, little meat cakes that make excellent sandwiches. Try them at your home today!
RECIPE HERE:
His Favorite, Meatloaf Supper, with the creamiest mashed potatoes you will ever eat
I can't begin to tell you how much my hubby loves meatloaf. I think he would eat it 3-4 times a week if I made it, then eat meatloaf sandwiches with the leftovers. It's not a hard entree to prepare, it's easy, simple, and a downhome comfort food. We like it with brown gravy, so that is what you will see me making it with today. If you like the ketchup, tomato sauce topping, by all means, use that. Just leave off the gravy. But you might still want the gravy for those creamy, dreamy, mashed potatoes. Directions below.
Enjoy!

Donkey Story:
Meatloaf
1 1/2 lbs ground chuck
1/4 cup onion, chopped, or more if you want
1 egg
salt & pepper to taste
bread crumbs, I used about 1/2 cup
1/4 half & half
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
1 Tbsp parsley
Preheat oven to 425 degrees
Mix all ingredients. Line a sheet pan with foil and spray with nonstick spray.
Turn mixture out onto pan. Shape into a loaf. Bake 40-50 minutes.
Mashed Potatoes
Cube potatoes, as many as you need for your family. Cover with water, add salt to taste, boil until tender. Drain water from pot. Leave potatoes in hot pot to dry up excess water. With wire whisk on hand mixer or stand mixer, whisk potatoes until fluffy. Add butter to taste. Pour in buttermilk a little at a time until fluffy.
Enjoy!

Shopping List:
1 lb 80/20 ground beef
1 lb ground pork
1 box Boursin Garlic and Herbs
1/4 cup diced parsley
1 bell pepper diced
1/2 large onion diced
2 tbsps sour cream
1-2 tbsps garlic paste
2 beaten eggs
1 1/2 - 2 cups bread crumbs
smoked paprika/italian seasoning/red pepper flakes
salt/pepper/garlic/onion powder
Sauce:
1 cup BBQ
1 cup ketchup
1-2 tbsps tomato paste
2 tbsps dijon mustard
1 tbsps worcestershire sauce
1/4 cup brown sugar
salt and pepper / smoked paprika
Directions:
Begin by prepping your veggies and parsley. Next, saute veggies, parsley, and garlic for 3-4 minutes. Place in freezer to chill after softened. In a large mixing bowl combine remaining ingredients (except sauce ingredients). Work everything together with your hands until it forms one large meatball. Add bread crumbs a little at a time until the loaf takes shape. Place mixture in the fridge for 30 minutes.
Preheat oven to 375 and form into a loaf shape. Place on wire rack or into a loaf pan. Bake for 30-45 minutes. Mix together sauce ingredients over medium low heat. Baste meatloaf with sauce during final 20-30 minutes. Meatloaf is done when it registers 165 degrees internal temp in the middle.
