These Sweet Potato Gnocchi are so addictive. All the savoury and sweet flavours hit all the right spots. I love the combo of pesto mix with the sweetness of the potatoes and I think you will love it too! They are easy and so incredibly delicious and I hope you will give them a try. Made only with 3 ingredients, they are gluten-free and dairy-free. Here I made two different styles, one quick and easy and the other a little more time-consuming both worth the effort. Serve them crispy pan-fried or simply boil and add your favourite sauce.

Potato Gnocchi
Gnocchi
Makes: ~75 gnocchi
Ingredients:
5 small russet potatoes
1 egg
1 cup all-purpose flour
2 Tablespoons butter
2 sage leaf stems
Salt & pepper to taste
Shaved parmesan for garnish
Directions:
1. Add potatoes to large pot with water and bring to a boil. Cover and simmer for at least 20 minutes or until cooked through- can test by sticking a fork or knife through the thickest part of the potato.
2. Once cooked and slightly cooled, peel potatoes with a spoon and mash until there are no distinct potato pieces
3. While preparing gnocchi, fill a large pot with water and add 1-2 teaspoons of salt. Bring to a boil
4. In large bowl add potato mixture and make a well to crack egg into the center and break apart yolk with your fingers and work egg into the potato mixture.
5. Add potato/egg mixture to clean surface and pour flour on top of the mixture. Knead in the flour to the potato egg mixture until all ingredients are evenly incorporated together
6. Form into a ball and divide into 4 sections with a knife or bowl scraper
7. Roll each section into a long rope using your hands on a flat surface, about 1 inch in wide.
8. Using knife or bowl scraper slice even 1 inch pieces of dough to form your gnocchi. Place fork on flat surface face down and roll each gnocchi along the ridge of the fork, allowing the gnocchi to form ridges. Place on parchment lined baking sheet.
9. Repeat steps 7 and 8 until all of the gnocchi are prepared
10. Add gnocchi into the pot of boiling water. Allow the water to come back to a boil and use a slotted spoon to remove gnocchi from water once floating. Place cooked gnocchi on parchment lined baking sheet
11. Heat large skillet and add butter and sage leaves. Once melted add gnocchi and pan fry until the sides of the gnocchi turn golden brown (7-9 minutes).
12. Once plated, add shaved parmesan cheese for garnish.
Makes: ~75 gnocchi

Italian Grandma Makes Gnocchi
GNOCCHI:
2 lbs Idaho Potatoes (900g)
1 extra large Egg
1 cup All Purpose Unbleached Flour (128g)
¼ tsp Pepper (1.5g)
1 tsp Salt (6g)
1 cup grated Pecorino Romano Cheese (100g)
2-4 oz Bench Flour – as needed (60-120g)
Add your favorite sauce and enjoy!

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
Does Gina read the comments?
