Chickpea Salad Recipe
This Chickpea Salad is a great, delicious and easy vegetarian salad that I do quite often, especially for gatherings as it can be made ahead of time. You can definitely make variations to this recipe, adjust it according to your tastes, add any other seeds or add some lemon juice, use yogurt or cream cheese instead of mayo, in any case it is very tasty, flavorful, healthy and nutritious.
Ingredients
Makes about 4 servings
2 cups chickpeas, rinsed and drained
2 green onions,chopped
2 cloves garlic, minced
1/2 red bell pepper, chopped
1/4 cup raw sunflower seeds (no shell)
1 tbsp sesame seeds
1 tbsp flax seeds
1/2 tsp salt, or more if needed
Freshly ground black pepper
Homemade mayonnaise
1 organic egg yolk
1/2 tsp mustard
1/4 cup cold pressed sunflower oil
Directions
1. Place the rinsed chickpeas into the bowl of a food processor and mix just a few to achieve a chunky consistency. No need for full mash. In case you don't have a food processor you can use a potato masher or even a fork.
2. In a medium bowl combine chickpeas with onions, garlic, red pepper, seeds, salt and pepper.
3. Make the homemade mayonnaise. Put the egg yolk and the mustard in a small bowl. Mix and gradually add oil while mixing until all oil is well incorporated.
4. Add mayonnaise over the chickpea salad and stir to combine.
5. Serve with pita chips, crackers,toast bread, wraps or whatever else you prefer. I've made Pita Bread Chips, recipe here, but this time I've made them with no oil, just sprinkled some paprika on top of chips.

chickpea-sweet potato salad recipe for weight loss, dinner/lunch salad recipe to lose weight fast, skinny recipes for weight loss. cooking in cast iron pan helps in iron absorption more. As my skillet is seasoned well, it just needed a little oil to saute the ingredients and roast the chickpeas without sticking to the pan plus I could serve a healthy salad for dinner. I used boiled chickpeas which I had pressure cooked but if you are using canned chickpeas then make sure you wash them before cooking. I have added an Indian touch to this salad by using Indian spices. Sweet potatoes are good carbs that will help you feel fuller but you can use cooked quinoa, bajra, barley, jowar etc instead. You can use any variety of capsicum.
NOTE: Iron deficiency is the most the most common nutritional deficiency. your thyroid needs adequate iron levels to produce active hormones T4 and T3. Symptoms of low iron can include fatigue, low energy, hair loss, feeling cold, weak or brittle nails, palpitations or shortness of breath, brain fog and more. Many of these symptoms are also symptoms of low thyroid function or hypothyroidism.
So, other than eating more iron-rich foods, another good way to increase iron intake is to cook foods in a cast iron pan or kadai.

Mediterranean Chickpea Salad Ready in 15 Mins!

Ingredients
2 (15-oz/439g) cans chickpeas, rinsed and drained
1 English cucumber, peeled and diced
2 roasted red peppers, diced
5-6 scallions, thinly sliced
1-2 cups grape tomatoes, halved
4 oz (115g) feta cheese
1/2-1 cup Kalamata olives, pitted and chopped
a handful of fresh parsley, finely chopped
2-3 tablespoons finely chopped fresh mint leaves
2-3 peperoncini peppers, sliced (optional)
The Dressing:
1/4 cup olive oil
2 tablespoons vinegar
2 tablespoons fresh lemon juice
1 garlic clove, grated
1 teaspoon dried crushed oregano
salt, to taste
freshly cracked black pepper, to taste
Instructions
Make the Dressing: Combine all of the dressing ingredients, except the salt and pepper, in a bowl and whisk them together.
Combine all of the salad ingredients in a large bowl and season with salt and pepper. Crumble the feta cheese on top and pour the dressing over the salad. Toss together and serve immediately or chilled.
Notes
Leftovers can be stored in an airtight container in the refrigerator for 2-3 days.
