2 c AM Potato Flakes
2 c Boiling water
1/2 c Garbanzo Flour
1/4 c Rice Flour
1 tb Smoked nutritional yeast
-- (optional) 1 t Sea salt
1 t Non-alum baking powder
-- (optional) 1 t Garlic powder
1/8 ts Cayenne or red pepper
Combine water and potato flakes quickly. They will set up firmly and be somewhat dry. Stir in the remaining ingredients. Drop by the teaspoonful onto hot oil and deep fry until golden brown. Potato Gnocchi
Ingredients:
550gr. of Old potatoes
100gr. of 00 Flour
Salt
Black pepper
Nutmeg
2 or 3 Yolks
Preparation:
The key ingredient are the potatoes.
They must be old because in old potato there is less water than in news.
When you prepare gnocchi, the water is the enemy.
So, you can cook the potatoes adding water (like boiling or steaming) or you can cook them removing water (roasting in the oven or cooking in the microwave).
I always prefer the second option, but even the first work with a little bit of attention.
It's up to you.
Peel the potatoes and cut them into regular cubes.
Wash them and drain but keep few water in the bowl.
Cover the bowl with plastic wrap and make some holes for the steam.
Cook in the microwave oven for 10 minutes at max temperature. After 5 minutes mix the potatoes and keep cooking.
If you cook your potatoes in the oven, don't peel them. Simply cover them with parchment paper and put in the oven preheated at 180° (355F) until they are very soft. Check with a stick.
After that, when they are still hot, crush them with a potato riser and let them cool down completely. For better results spread the potato mash on a large plate.
Season with salt, black pepper and freshly grated nutmeg.
Now, if you want you can add spinach or tomato to color your gnocchi but keep always an eye on the water in this ingredient. As I said, less is better!
Add only the yolks. 3 for 500gr. of potatoes.
Mix with the spatula and start to add the sifted flour.
When the dough will have absorbed half of the flour, transfer it on the table and keep kneading with your hand.
Finish to add flour and form a disk 2cm thick.
Cut it into thick slices.
Roll each slice to form a long strip then cut it into little pieces.
Sometimes sprinkle with flour to prevent sticking.
Using a gnocchi board (or a fork) shape each piece of dough.
With a sieve remove the excess flour.
Cook the gnocchi in boiling salty water until they start floating (about 3 minutes).
If you want to eat them immediately drain them and season as you prefer.
But, if you have prepared them in advance mix them with few extra virgin olive oil and let them cool

Try this potato gnocchi recipe for something simple yet special. It's so delicious my family had it two days in a row. :) I'm not making any claims as to the authenticity of this recipe (I think traditional Italian gnocchi often contains egg and cheese) but it certainly hit the spot!
Recipe:
1 cup flour
1 cup mashed cooled white potato
1 tsp salt
OPTIONAL: customize with dried herbs
Combine ingredients, knead into a dough, roll out into ropes and cut into 1-inch pieces (or smaller if you prefer).
Add gnocchi to water at a rolling boil and cook 3-5 minutes until it floats. That's all!
