How To make Potato Fudge Cake
1 c Butter or margarine
2 c Sugar
4 Eggs; beaten separately
1 c Raw potato; grated
1 German's sweet chocolate
Grated rind of 1 lemon 1/2 ts Allspice
1/2 ts Ground cloves
1/2 ts Cinnamon
1/2 c Milk
2 c Flour
2 1/4 ts Baking powder
1/2 lb Chopped almonds
1 oz Bitter chocolate
1/2 ts Butter
marshmallow icing:
1 1/2 c Brown sugar
1/3 c Butter
1/4 c Boiling water
1/2 lb Marshmallows
1/2 ts Vanilla
Cream shortening, add sugar gradually. Add beaten egg yolks, potato, and lemon rind. Sift flour and measure. Use part of flour to dust almonds. Add dry ingredients to remaining flour and sift 3 times. Add milk and dry ingredients alternately to sugar mixture. add melted chocolate and nuts. Fold in egg whites last. Bake in a 10x3" round torte pan with waxed paper cut to fit bottom
and greased and floured sides. Bake at 325~ for 1 hr, 15 min. Remove from oven and cool 5 min on a rack. Remove from pan and cool. cover with Marshmallow Icing. Melt 1 ounce bitter chocolate and 1/2 t butter in a small pan over boiling water. Spoon this mixture around edges of cake, let it run down the sides. MARSHMALLOW ICING: Cook brown sugar, butter and water in a boil until it reaches the softball stage. Add marshmallows and melt in a double boiler until spreadable. Beat in vanilla. Sweet Potato Chocolate Cake - Dreena Burton's recipe! (VEGAN, OIL FREE)
OMG I am not exaggerating when I say that this is the best Vegan Chocolate Cake ever! In fact, it's the best chocolate cake I have ever eaten. Period. It even rivals my avocado chocolate cake!
And the best part is that it does not have any oil or refined sugar or flour. So it's as healthy of a cake as you can ever attempt to make and yet it's so amazingly indulgent!
Sweet Potato Chocolate Cake
CAKE
WET ingredients:
¾ cup cooked sweet potato
1 Tbsp balsamic vinegar
2 tsp vanilla extract
¼ cup pure maple syrup
½ cup water
DRY ingredients:
1 cup of wholegrain spelt flour or wholegrain fine wheat flour
1/3 cup coconut sugar
¼ to ½ tsp salt
¼ cup dark chocolate chips/chunks
¼ cup cocoa powder
1 tsp baking powder
1 scant tsp soda bicarbonate
Bake at 175 degrees Celcius for 21-23 minutes.
FROSTING
1 cup cooked sweet potato
½ cup almond, cashew or sunflower seed butter
2/3 cup coconut sugar, blended into a fine caster sugar or powdered sugar
¼ tsp salt
1-5 Tbsp plant milk (according to your desired consistency)
½ cup cocoa powder

200 grams self raising flour ( 7.05 oz )
200 grams peeled / chopped sweet potato ( 7.05 oz )
150 grams butter ( 5.29 oz )
40 grams cocoa powder ( 1.41 oz )
175 grams light brown sugar ( 6.17 oz )
2 medium eggs
2 teaspoons orange zest
85 ml double cream ( 2.87 fl oz )
150 grams dark chocolate ( 5.29 oz )
1/2 teaspoon baking powder ( 2.84 grams )
1/8 teaspoon ground ginger ( 0.35 grams )
1/8 teaspoon ground cinnamon ( 0.38 grams )
1/8 teaspoon nutmeg ( 0.27 grams )
1/8 teaspoon allspice ( 0.23 grams )
1/4 teaspoon ground clove ( 0.26 grams )
1/8 caraway seeds ( 0.26 grams )
1/8 teaspoon coriander ( 0.22 grams )
orange bits ( decoration )
INSTRUCTIONS :
.spray a baking dish with canola oil & line with parchment paper
.boil 200 grams peeled / chopped sweet potato until soft & drain water
.in a large bowl add 150 grams butter, 175 grams light brown sugar
.whisk until pale & fluffy
.add 1 egg, spoonful self raising flour & whisk for 1 minute
.add another 1 egg, spoonful self raising flour & whisk for 1 minute
.add remaining self raising flour, 1/2 teaspoon baking powder
.add 40 grams cocoa powder, 1/8 teaspoon ground ginger
.add 1/8 teaspoon ground cinnamon, 1/8 teaspoon nutmeg
.add 1/8 teaspoon allspice, 1/4 teaspoon ground clove
.add 1/8 teaspoon coriander, 1/8 caraway seeds
.add 1 teaspoon orange zest, sweet potato
.slowly whisk well until batter consistency
.place batter into the baking dish & spread evenly
.place in preheated oven 180 c / 356 f for 30 minutes
.heat up 85 ml double cream until boiling
.turn off heat, add 150 grams dark chocolate bits, mix until melted
.add 1 teaspoon orange zest & continue to mix
.spoon the cream on top of the cake & spread evenly
.decorate with orange bits & leave to cool
