Hello Folks!
I hope I find you all well. So today for tea, we had this wonderful cheesy potato & baked bean pie! I makes such a delicious side…or even on it’s own as a much :) You could add all sorts of things to this, and corned beef works so well in this too!
Everything I used will be below.

Serves 4 as a side
* 900g (2lbs) Potatoes - I used Maris Piper
* 4 cloves of garlic
* 150g (5 oz) Grated cheese - I used cheddar
* 150g (5 oz) Grated parmesan cheese
* 1/2 Tablespoon of dried parsley
* 200g (7 oz) Baked beans
* A handful of breadcrumbs - I used panko breadcrumbs
* A knob of butter
* A splash of milk or cream
* Salt & Pepper to taste

Co-op Food | Beans, Fish Finger & Potato Pie
Two student staples come together to make this tasty pie.

4 Co-op fish fingers
2 large potatoes
10g Co-op unsalted butter
2 tbsp Co-op semi-skimmed milk
1 x 410g can Co-op baked beans
20g Co-op Irresistible mature Cheddar, grated
1 Cook the fish fingers according to the pack instructions. Meanwhile, peel and roughly chop the potatoes. Boil until just tender (about 10 mins), drain and roughly mash with the butter and milk.
2 Once cooked, layer the fish fingers in the bottom of a small ovenproof dish, and top with the baked beans. Spoon the mash on top, dot with a bit more butter and sprinkle over the grated cheese.
3 Bake for 15 mins, until golden. Season with freshly ground black pepper, and serve.

Food safety

Bean Pie Recipe
Bean Pie may not sound appetizing, but trust...it is! It's not too sweet but sweet enough. If you are one who loves a slice of pie as a side to a main dish, then this recipe is for you.
Ingredients:
????️2 9-inch Deep Pie Crust
????️2 cans of beans (Pinto, Northern White, or Navy) (15oz)
????️ ½ cup melted butter (room temp)
????️1 can Evaporated milk (12oz)
????️2 Cups Brown Sugar (Dark & Light or mix)
????️1½ tsp Cinnamon
????️½ tsp Nutmeg
????️2 large eggs
????️2 tbsp All-purpose Flour
????️2 tbsp Vanilla Extract
????️ 1 tsp All-Spice (opt)
????️ 1 tsp Creme Bouquet (opt)
Note: Cold ingredients should be room temperature.
Pie Filling:
Use a blender or food processor. Blend the rinsed & drained beans, milk, sugars, cinnamon, nutmeg, eggs, flour & vanilla.
Directions:
▪️Make the crust from scratch or make sure frozen crust is thawed out.
▪️Heat the oven on 375° or 400°.
▪️Poke holes into the crust and cover the edges with foil or special cooking gadget. Bake for 10 mins.
▪️Once done, set the oven to 450°.
▪️Pour filling into the crust & bake for 15 mins. ▪️Set the oven to 350° and bake for an additional 35 mins.
Let set for an hour (not like I did) before cutting. Flavor & texture is best when set overnight. Enjoy!

1 cup canned navy beans, rinsed and drained
1 cup sugar
4 tbsp. unsalted butter
1½ tbsp. flour
1 tbsp. vanilla extract
1 tsp. ground cinnamon
½ tsp. freshly grated nutmeg
3 eggs
INSTRUCTIONS
1. Make the crust: Pulse flour, butter, and salt in a food processor into pea-size crumbles. Add water; pulse until dough forms. Flatten dough into a disk and wrap in plastic wrap; chill 1 hour.
2. Make the filling: Heat oven to 350°. Purée evaporated milk, beans, sugar, butter, flour, vanilla, cinnamon, nutmeg, and eggs in a blender until smooth. On a lightly floured surface, roll dough into a 12″ round. Fit into a 9″ pie plate; trim edges and crimp. Pour filling over dough; bake until golden brown on top and filling is set, about 1 hour. Let pie cool completely before serving.

Ingredients:
For the meat mixture:
2 pounds (1kg) ground lamb
1 large onion, chopped
3 garlic cloves, crushed
3 tbsp olive oil
4 tbsp (30) flour
1/2 tsp salt
1/2 black pepper
1 tsp rosemary
1 tsp thyme
1 tbsp tomato paste
2 cups beef broth
7oz (200g) carrots
7oz (200g) peas (fresh or frozen)
For the puree:
3.5 pounds (1.5kg) potatoes
1 tbsp butter
1/2 cup (120ml) milk
1/4 cup (25g) cheddar cheese
1/2 tsp salt
1/2 black pepper
egg yolk
Directions:
1. Peel the potatoes and cut into 4. Place in a medium pot and cover with cold water. Set over high heat, add a teaspoon of salt, cover and bring to a boil. cook until tender.
2. While the potatoes are cooking, heat olive oil in a pan over medium heat. Add the onion and sauté 2-3 minutes, add crushed garlic and chopped carrots, sauté until the carrots are tender, about 5-7 minutes.
3. Add the ground lamb, Cook until no longer pink, about 5 minutes. Season with salt, pepper, chopped rosemary and thyme. Add tomato paste, flour and stir.
4. Add beef broth and frozen peas. Bring to a simmer, reduce heat to low and cook, stirring occasionally, until sauce thickens.
5. When the potatoes are done cooking transfer them to a bowl. Add butter, milk, egg yolk, salt and pepper. mash the potatoes until smooth.
6. Preheat oven to 400F (200C).
7. Layer the meat mixture in a 13X8.5 (33X22cm) ovenproof dish. Spread the puree over the meat mixture.
8. Bake 20-25 minutes. or until mashed potato is golden brown.
