⭐️ This black bean salad with roasted sweet potatoes, corn, green or red bell pepper, creamy avocado, jalapeños, and a cilantro lime dressing with fresh cilantro and lime juice is a winner.
⭐️ Ingredients
FOR THE SALAD
1 cup (180 grams) cooked black beans
1½ pound (680 grams) sweet potatoes peeled and chopped into 1-Inch cubes
1 cup (120 grams) green bell pepper diced
1 medium avocado diced
½ cup (100 grams) corn
½ red onion chopped
¼ cup pickled jalapeños chopped
FOR THE CILANTRO LIME DRESSING
1 cup packed (25 grams) cilantro
⅓ cup (72 grams) extra virgin olive oil
¼ cup (60 grams) lime juice
2 tablespoons (30 grams) maple syrup
½ clove garlic
½ teaspoon grated ginger
½ teaspoon salt

Potatoes and Green Beans Recipe
Welcome to STUDENT MEALZ! How to make Potatoes and Green Beans? Well today we're going to tell you just that ;p
== INGREDIENTS ==
- About 5-6 potatoes
- 500 grams of green beans
- 1 onion
- 1 garlic
- parsley
- butter
- olive oil
- pepper
- salt
- dried oregano
- dried basil
== RECIPE ==
1. Rinse the potatoes very well because we're going to leave the peel on
2. Cut them in quarters
3. Place the potatoes in salted water and let them boil until they're done
4. Cut the ends of the green beans and cut them in half again
5. Boil the beans for about 7 minutes in salted water
6. In the meanwhile slice the onion and the garlic in thin strips
7. Chop up the parsley
8. When the green beans are done, drain them and let them scare in cold water.
9. Drain the potatoes when they're done!
10. Take a large frying pan or a wok and add olive oil
11. When the olive oil is hot add the onion and let it fry for about 2 minutes
12. Season with oregano and basil
13. Add the garlic and let it fry some more until the onion starts to become golden
14. Lower the fire and add the green beans and potatoes and let everything fry for another 2 to 3 minutes
15. When it's nearly done, add the butter, let it melt and stir very well again
16. Finally turn off the heat and season with pepper and salt and add the parsley
17. Give a final good stir and it's ready to be served!

1 lb Fresh String Beans (boiled in water with 1 Tbsp Salt)
½ cup Red Onion, sliced

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. It is in the province of Foggia in the Puglia region of southeast Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina enjoys making food for her family in the same old fashion ways as she was taught by her mother and grandmother in Italy, and also new things she has subsequently learned from family and friends in America. She also enjoys gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera and behind the scenes?
Grandma Gina’s retired son-in-law, Nick, does the filming, editing, production, and channel management. Her daughter, Maria, helps with food preparation, kitchen setup and fan support. Also, Grandma Gina usually has one or two grand-kids in the kitchen to help.
Does Gina read the comments?
We print out and show her how much love she gets from all her viewers, and she is very thankful and hopes you enjoy her cooking! Your comments bring her lots of joy, laughter, and inspiration to make more videos to share with you.
