shoulder of mutton cooked low and slow on the Aldi Kamado
low and slow was the order of the day.
the shoulder of mutton was cooked at 120c I'm the dome using my latest cooking gadget the Aldi Kamado .
I cooked using big k lumpwood charcoal using the indirect method .
the cooked was 7 hours .
my thoughts are that mutton is super gamey , grassy and earthy .
if you are not into that kind of vibe then brace yourself .
I think next time should I give mutton a try I will go with simpler with garlic and rosemary pressed into incisions as the wet rub was a little to bold

Ingredients:
5lb raw chicken
12oz can beer
1/2 head of garlic
1 sprig of rosemary
1 sprig of thyme
6oz butter
2 lemons
2 tbsp salt
2 tbsp pepper
Directions
1. Remove chicken gizzards and rest on paper towels until chicken gets to room temp
2. Heat a pot on medium and add in butter and garlic. Kill the heat and add lemon and herbs. Store rub in a fridge for an hour
3. Stuff chicken with lemons, garlic, herbs, and add salt and pepper
4. Remove rub from fridge and lather up the chicken
5. Cook for about an hour (or however long it takes to get the fattest part of the breast to 165F)

This Chinese Braised Pork Belly is known as Dong Po Rou 东坡肉, which is said to be created by Su Dongpo when he was banished to Hangzhou. Traditionally this dish is made by pan-frying the pork belly first then the pork is braised over low heat. However, you know we love to simplify methods without compromising the taste so we took away the pan-frying part and went straight to braising immediately after the pork is blanched. Melt In Your Mouth Pork Belly (Dong Po Rou 东坡肉) Chinese Braised Pork Belly
Ingredients:
Serves 4 - 6 pax

Blanch the following:

700g pork belly
1 thumb size young ginger (sliced thinly)
2 tablespoons Chinese cooking wine (Shaoxing Huatiao wine)

Braise the following:

1 stalk of leek (or spring onion / scallion)
30g young ginger (sliced thinly)
50g rock sugar (or brown sugar / white sugar)
2 bay leaves
1 cinnamon stick
1 star anise
250ml Chinese white rice wine (白米酒)
4 tablespoons Chinese cooking wine (Shaoxing Huatiao wine)
125ml light soy sauce
4 tablespoons premium dark soy sauce
Enough water to cover the pork

INGREDIENTS!! How To Make Oxtail.
3 1/2 LB oxtail cleaned with lime juice and lemon
1 tsp salt
1/8 tsp pepper
1 tbsp adobo seasoning
1 scotch bonnets pepper
