-wilh whole cloves 2 Peeled onions, halved
2 Scraped parsnips
1 lb Pork lenderloin, (oplional)
2 Stalks celery, cut in 2-inch
-pieces 2 Or 3 chicken breasts
10 oz Beef bouillon
1/2 lb Polish sausage, cut up,
-browned and drained 3 Carrots, scraped and cut in
3 Inch pieces
Salt to taste Herb Bouquet * * wrapped in cheesecloth or in tea strainer) 1 bay leat, 6 peppercorns, 1/2 leaspoon thyme, 4 garlic cloves. ** Alternate pieces of meat in CROCK-POT with sausage on top; add vegetables on sides to fill up. Put herbs wrapped in cheesecloth or in strainer in the approximate center. Pour in bouillon. Cover and cook on Low 8 to 10 hours. Serve with cooked carrots, leeks, turnips, onions and potatoes. Homemade Pot au Feu
Pot-au-feu is a slowly simmered meat and vegetable dish that appears on most home tables in France. Pot au Feu, which literally translates to ‘pot in the fire’, started its life in working-class homes as a way to make less expensive cuts of beef more tender and palatable. Think the original crockpot. The long slow cooking resulted in 2 dishes: a clear nourishing broth and a rich meal of beef and vegetables.
There are as many variations of pot au feu as there are cooks. I have eaten pot-au-feu prepared with lamb, chicken, lobster. and even a version that more resembled the ingredient list for a proper cassoulet. The two versions I have included are how my mother cooked it and a more restaurant version from chef Michel Guerard. Whichever recipe you follow, the constants remain the same: The broth is always served first with toasted slices of baguette crowned with morsels of fatty beef marrow, and the meat and vegetables are served second.

La meilleure façon de... Réussir son pot au feu - 750g
La recette par ici :
Pour 4 personnes, les ingrédients :
400 g de gîte-gîte
400 g de macreuse
400 g de jarret de boeuf
800 g de queue de bœuf tronçonnée
4 tronçons d’os à moelle
Garniture aromatique :
100 g de carottes
1 oignon
1 clou de girofle
100 g de poireaux
50 g de céleri en branche
1 gousse d’ail
1 bouquet garni :
1 branche de thym
1 feuille de laurier
5 tiges de persil frisé
1 branche de céleri
Garniture d’accompagnement :
400 g de carottes
400 g de navets
200 g de panais
200 g de blancs de poireaux
500 g de pommes de terre à chair ferme
Préparation :
Préparation des légumes
1 Eplucher et laver tous les légumes
2 Conserver les pommes de terre dans de l’eau froide
Préparation de la garniture aromatique
3 Préparer les légumes de la garniture aromatique
4 Tronçonner les carottes si elles sont très grosses, sinon les laisser entières
5 Clouter l’oignon avec 1 clou de girofle
6 Couper transversalement l’oignon et le faire colorer à sec dans une poêle. Il faut qu’il soit très coloré.
7 Confectionner un bouquet garni avec les queues de persil, le thym, le laurier, une feuille de poireau, une carotte coupée en deux dans la longueur et le céleri en branche
Cuisson des queues de boeuf
8 Placer dans la cocotte les queues de bœuf et la garniture aromatique
9 Couvrir d’eau froide jusqu’à 2 cm au-dessus des ingrédients
10 Démarrer la cuisson et cuire à frémissement
11 Si l’eau bouille, baisser le feu
12 Ecumer régulièrement et saler légèrement
13 Cuire à frémissement durant 1h environ
Préparation des viandes
14 Préparer les viandes du pot-au-feu
15 Eliminer les parties grasses et nerveuses en excès.
16 Ficeler chaque morceau de viande pour leur donner une forme régulière
Préparation des os à moelle
17 Placer les os à moelle dans un saladier avec du vinaigre et de l’eau froide
18 Réserver au réfrigérateur au moins 2 h à 3 heures
Cuisson des viandes
19 Démarrer la cuisson des viandes
20 Plonger les viandes dans le liquide frémissant jusqu’à ce qu’elles soient bien immergées
21 Maintenir constamment la cuisson à feu très doux et régulier durant environ 3h
22 Ecumer fréquemment et dégraisser si nécessaire. Le liquide de cuisson doit rester parfaitement limpide et légèrement ambré
Découpe des légumes
23 Couper les carottes, navets et panais en tronçons
24 Éliminer le vert et tronçonner les blancs de poireaux et les ficeler
Cuisson des légumes
25 Cuire les légumes 30 minutes avant la fin de la cuisson des viandes
26 Couvrir avec un torchon propre pour maintenir les éléments immergés
27 Cuire les pommes de terre à l’anglaise, en démarrant la cuisson à l’eau froide
28 Saler au gros sel et écumer si nécessaire
Pochage des os à moelle
29 10 min avant de servir le pot-au-feu, appliquer quelques grains de gros sel aux extrémités des os à moelle, les enfermer dans une mousseline (gaze stérile)
30 Pocher les os à moelle dans le bouillon de pot-au-feu à frémissement
31 Vérifier la cuisson des viandes et des légumes
Dressage du pot-au-feu
32 Dresser le pot-au-feu
33 Couper les viandes en tranches épaisses et les dresser dans un grand plat creux
34 Disposer harmonieusement les légumes par bouquets autour de la viande en variant les 35 couleurs
36 Placer les os à moelle au centre du plat
37 Arroser de bouillon de pot-au-feu.

Don't be deceived by the simplicity of this French dish, as the various beef cuts really brings a whole range of texture and flavors. and when combined with some aromatic vegetable the whole dish comes together to become that ultimate French classic that has been around for centuries.
