4 Pork chops, cut 1-inch thick
(about 2 lb) Salt and pepper 1/2 c Thinly sliced onion
16 oz Can sauerkraut, undrained
1/2 t Caraway seeds
1 Tart apple, peeled, cored
-and thinly sliced 1/2 c Water
1. In a heat-resistant, non-metallic skillet, heat oil on a conven-tional
surface unit until hot. 2. Sear pork chops on both sides until browned. 3. Sprinkle chops lightly with salt and pepper, to taste. Drain any excess fat. 4. Arrange onion and sauerkraut over pork chops. 5. Heat, covered, in Microwave Oven 5 minutes. 6. Sprinkle caraway seeds over sauerkraut and arrange apple slices on top. 7. Add water and heat, covered, in Microwave Oven 4 minutes. Heat, uncovered, in Microwave Oven an additional 5 minutes or until pork chops are fork-tender. Pork should always be cooked to well-done. Tip: If a heat-resistant, non-metallic skillet is not available, any skillet may be used for browning, and the seared chops may be transferred to a shallow, 1 1/2-quart or 2-quart, heat-resistant, non-metallic casserole after Step 3.

Cast Iron Cooking: Pork Chops with Apples and Sauerkraut
Ingredients:
4 thick pork chops
Salt, pepper, garlic powder to taste
1 TBSP. vegetable oil
3 large apples, peeled and cut into wedges
1 15-oz. can of sauerkraut, drained
2 TBSP. white wine (optional)
1/2 cup light brown sugar

Mix together the sauerkraut, wine, and brown sugar in a large bowl. Add the apple wedges to the skillet, then place the pork chops on top of them. Cover everything with the sauerkraut mixture, top with some freshly ground black pepper and bake for 45 minutes.
Plate the pork chops and then mix the sauerkraut and apples well to make sure you get all of the brown sugar and juices from the bottom of the skillet. Serve with mustard and boiled potatoes or nice crusty bread and butter.

Pork Chops with SauerKraut is an easy delicious meal to prepare. Just a few ingreidents and steps, can take the sour bite out of that sauerkraut for a nice blend with the apples, onions and pork chops.
A Bit of Sauerkraut Trivia:
Sauerkraut is cabbage, processed by fermentation, before frozen foods. It is high in Vitamin C and also was a preventative of scurvy. Captian James Cook of the British Royal Navy ate and served sauerkraut to his crew on his voyages at sea for just this purpose, but later they switched to limes. Hence they earned the nick name Limey The German's picked up on the sauerkraut idea and contined the pratice of eating sauerkraut on their voyages and earned the nickname Kraut.
Sauerkraut can be used as an appetizer, side dish, in soups salads and stews and even desserts.
