How To make Pollo Loco Marinade
1 Lemon ; juiced
1 Orange; juiced
2 tb White vinegar
2 Worchestershire sauce
1/2 c Chili sauce
2 ts Sugar
2 ts Garlic powder
Tabasco to taste 2 tb Oil
Just marinate chicken in this mixture for 4-24 hours. Grill 20 minutes on each side. Serve with flour tortillas and fresh salsa.

Let me tell you I have always grilled my chicken on my stovetop, today I decided to give my new grill a try! Please give me a chance to get better at this grilling stuff ???? it’s so much different than what I’m used to but like everything, practice makes perfect and I promise you all that I will master this new challenge I placed my self in! Tip!!! Add more cayenne pepper if you want your marinade to be spicy ???? if you grill on stove top, grill each side for 6-8 minutes on medium heat
Make sure internal temperature reaches 160-165
Marinade in the refrigerator for 6 hour or at least 2
Ingredients:
3 lbs chicken
7 garlic cloves
1 small white onion cut into rings
Sliced jalapeños I’m using 3
1/3 cup oil
1/3 cup lime juice (3 limes)
1/2 cup orange juice (1 large orange or 2 small)
1/2 cup pineapple juice
2-3 tbsp chef mérito chicken red seasoning
1 tbsp whole black pepper
1 tsp whole cumin
1 tsp New Mexico chile powder
1 tsp smoked paprika
1/2 tsp cayenne pepper
1/2 tsp salt

El Pollo Loco Chicken Recipe you can make at Home
Ingredients
●1 ½ Cups orange juice
●6 Tablespoons of lemon juice
●4 Tablespoons of lime juice
●2 Tablespoons white vinegar
●4 Garlic cloves minced (best if done with a zester)
●2 Teaspoons salt
●2 Teaspoons dried oregano
●2 Tablespoons Worcestershire sauce
●½ Teaspoon ground pepper
●1 Teaspoon chili sauce or chili paste
●3 Drops of yellow food coloring
●2 Tablespoons vegetable oil
●5 Drumsticks (Costco individual bags of parts)
●5 Wings cut off the extra limb (Costco individual bags of parts)
●3 Thighs (Costco individual bags of parts)
Directions
1.Marinate chicken in zip lock bag for 24 hours overnight in the refrigerator
2.Bake all the chicken in a glass 13 x 9 dish in the oven covered with tin foil in all of the marinade for 1 hour 20 Minutes at 375 degrees (on the video I said 1 hour but I usually bake it for more than one hour)
3.After 1 hour and 20 minutes take the chicken out of the oven and let it rest for 15 minutes
4.BBQ the chicken on low flame out in the open (keep the hood of the BBQ up/open) for 20 minutes turning it 4 times (every 5 minutes). Baste the chicken frequently with the marinade from the 13 x 9 dish while it is BBQing
5.Serve the chicken with tortillas, rice and beans if desired

Ever wonder how to make that good el pollo loco chicken?
well heres my take on that :)
4lbs chicken
6 oz pineapple juice
2tbsp lime juice
1tbsp white vinegar
2 garlic cloves (minced)
1/2tsp salt
1/2tsp oregano
1/8tsp pepper
1/4 tsp chili powder or fresh minced jalapeno chili
8-10 drops of yellow food coloring
1tbsp olive oil.
marinate 3-6 hours or over night then grill.
165 Deg. Farenheit (internal temp of the chicken)
grill for 12 mins each turning 4 times.
