GREEK CHICKEN RECIPE (from @shesinherapron )
4 boneless, skinless chicken breasts
1 tbsp olive oil
1/4 cup Greek Vinaigrette dressing
1/4 cup chicken broth
1 onion, chopped
1 red bell pepper, seeded and sliced
1 tsp dried thyme
small can sliced black olives, drained
1/4 cup feta cheese
Season the chicken however you like. Heat oil in pan over medium-high heat. Add chicken and cook until browned on both sides. Add in Greek dressing and chicken broth. Blend and simmer for 3 minutes. Add onion, thyme, red pepper, olives and feta. Cook until veggies are tender and chicken is done. Serve over rice!

pollo asado is roasted chicken that is usually done on the grill, but sometimes in the oven. after making this you can use the meat ofr burritos, tacos, nachos, etc. It is great by itself with lime. try this recipe as i describe in this video and i guarantee that you will never make chicken the same. the brine is a step you do not want to pass up. it is the secret to a great grilled or roasted chicken.

Mexican Pollo Asado/Mexican Marinated Chicken
2 lb boneless skinless chicken thighs
Marinade:
1 bunch of cilantro (after I made this I realized that I could have used 1/2 this amount of cilantro.)
juice of 2 oranges
juice of 2 limes
2 packets of Sazon seasoning Goya
(con culantro y achote) (coriander & annatto)
1 tbsp white wine vinegar
1/2 tsp salt
1/2 tsp pepper
1/2 onion
1/4 cup olive oil
**cook approximately 5 to 6 minutes on each side.**
