El Pollo Loco Grilled Chicken Copycat Recipe! (On The Primo G420)
My version of El Pollo Loco's grilled chicken! This recipe was inspired by the grilled chicken served up in Sinaloa Mexico.
Marinade:
1/2 cup rice vinegar
1/4 cup lime juice
1/4 cup orange juice
1/4 cup pineapple juice
2 teaspoons ancho chile powder
2 teaspoons paprika
1 teaspoon ground cinnamon
1 teaspoon ground black pepper
1 teaspoon turmeric
1-2 pinches saflour
1/2 teaspoon salt
1/4 teaspoon ground allspice
1/4 teaspoon ground cayenne
1/4 teaspoon ground clove
1/4 teaspoon ground coriander (cilantro seed)
6 cloves garlic, minced

Copycat Pollo Tropical Chicken #shorts
My attempt at a copycat chicken from Pollo Tropical. Had this in Miami back in March and it was delicious.
For the marinade:
½ cup orange juice
½ cup grapefruit juice
Juice from 2 limes
¼ cup olive oil
2 tbsp minced garlic
½ minced white onion
2 tsp each: salt, pepper, cumin, dried oregano
I reserved about ¼ cup of the marinade and used the rest for the chicken. After an overnight marinade, it hit the @biggreenegg at 400 degrees. I moved it between indirect and direct heat, and basted it with the reserved marinade. Smelled amazing!!
Served it with balsamic tomatoes, also from Pollo Tropical, and dinner was delicious!! We don’t have that chain by us so this recipe is being added to the rotation lol. #reels #grillinwithdad #tasty #chicken #recipe #bbq #grill #eeeeeats #nomnom #backyardbbq #foodstagram
El Pollo Loco Chicken Recipe - Grilled Chicken CopyCat - Weber Kettle Grill
El Pollo Loco chain of restaurants is famous for its delicious signature menu item – flame grilled chicken marinated in a secret recipe of herbs, spices and citrus juices, following a recipe that was handed down from the founding family in Mexico.
While El Pollo Loco is a great choice for a fast food meal, I think I have made a version that is much more flavor.
Below is the recipe that I used as a guide:
Ingredients:
6 ounces pineapple juice
2 tablespoons lime juice
1 tablespoon white vinegar
2 garlic cloves, minced
1⁄2 teaspoon salt
1⁄2 teaspoon dried oregano, crumbled
1⁄8 teaspoon ground pepper
1⁄4 teaspoon mild chili pepper, remove stem and seeds from chiles, finely minced (Anaheim or California)
8 drops yellow food coloring (but accurate) (optional)
1 tablespoon vegetable oil
4 lbs frying chicken, cut up
Marinate chicken in zip-lock bag over-nite.
Reserve 1/4 cup marinade to baste while cooking, making sure the chicken cooks on both sides minutes AFTER basting the final time--we don't want our Italian friend Sal Monilla to show up :-).
Grill over indirect heat, turning 4 times, 12 minutes each time.
Serve with your favorite tortillas, rice and Borracho beans.

Tip!!! Add more cayenne pepper if you want your marinade to be spicy ???? if you grill on stove top, grill each side for 6-8 minutes on medium heat
Make sure internal temperature reaches 160-165
Marinade in the refrigerator for 6 hour or at least 2

Sliced jalapeños I’m using 3
1/3 cup oil
1/3 cup lime juice (3 limes)
1/2 cup orange juice (1 large orange or 2 small)
1/2 cup pineapple juice
2-3 tbsp chef mérito chicken red seasoning
1 tbsp whole black pepper
1 tsp whole cumin
1 tsp New Mexico chile powder
1 tsp smoked paprika
1/2 tsp cayenne pepper
1/2 tsp salt
