How To make Plum Streusel Coffee Cake
StrEUSEL:
3/4 c Brown sugar, firmly packed
3 tb All-purpose flour
2 ts Cinnamon
1/2 ts Salt
3 tb Softened butter
1/2 c Chopped walnuts
BATTER:
16 Halved & pitted, plums
1/4 c Granulated white sugar
-for coating plums 1/2 ts Salt
2 ts Baking powder
2 c Sifted all-purpose flour
3/4 c Granulated white sugar
1/4 c Soft shortening
1 Egg, beaten
1/2 c Milk
Streusel: Mix all ingredients together, well. Batter: Gently mix plum halves with 1/4 cup sugar until fruit is evenly coated. Combine the sifted flour, baking powder, sugar and salt. Sift into mixing bowl. Cut shortening into dry ingredients with pastry blender. Add egg, beaten until thick and lemon colored. Combine with milk. Stir just until dry ingredients are moistened. Spread half of batter into buttered 9x9x2" baking dish. Sprinkle with half the streusel mixture. Distribute 16 plum halves evenly over the surface, spread remaining batter over the plum halves; cover with the remainder of the streusel mixture and top with the remaining plum halves. Bake in a 350 degree over until done, about 50 minutes. Yield 16 generous squares. Wrap any leftover coffee cake in foil to keep fresh for eating cold or heated the next day.

Fresh Plums look so pretty sitting on top of a cake. You may think that plums, when cut in half, would dry out during baking but the opposite is true. A little sugar sprinkled on the top of the plums, along with the heat from the oven, causes the plums to soften and their juices to be released. So by the end of the baking time they have become wonderfully soft and almost jam-like with nicely caramelized edges. And the cake. Well, this cake is deliciously flavorful, and no electric mixer is needed to make the batter.

Delicious, Soft Plum Cake. This cake is very famous in Germany.
You will be surprised how quickly and easily you can make it!
???? Ingredients:
200 g sour cream
2 large eggs
80 g melted butter
a pinch of salt
1 tsp vanilla extract
80 g cane sugar
16 g baking powder
280 g all-purpose flour
Streusel:
200 g flour
80 g butter (room temperature)
50 g sugar
pie filling:
3-4 tbsp plum jam
4 medium plums
1 medium apple
Baking tray size
23x33 cm
9x13 in
Bake in a preheated at 350°F (175°C) oven for about 40-45 minutes.
(toothpick test is always the best to check doneness)

Plum Streusel Coffee Cake ????
While I can eat plums all year, they're especially yummy in autumn when mixed with pumpkins and cinnamon~ This is by far my easiest cake to make and my favorite specifically because it has plums.
INGREDIENTS:
CAKE
- 1/2 cup of butter (one stick)
- 2/3 cup of white sugar
- 2 large eggs
- 1 tsp vanilla
- 1 tsp baking powder
- 1 cup all-purpose flour
- 3-4 dark plums
STRUESEL
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup butter
- 1/4 tsp cinnamon
INSTRUCTIONS:
1. Preheat oven 350F/140C.
2. Mix butter, sugar, eggs, and vanilla together.
3. Add the baking powder and flour, folding into the wet mixture until combined. It will be a very thick batter.
4. Pour batter into a greased spring form pan (it's easier to remove and cut into cake this way).
5. Splice plums to desired thickness (I prefer mine to a medium thickness), then place into batter, pushing all the way down to the bottom of the pan. My plums always end up on top of the cake no matter what I do.
6. For the streusel, you're going to go dry to wet, flour, sugar, cinnamon, then butter. You want to get your hands into this or use this butter cutting tool to help combine the ingredients together until they're crumbly. Try not to over mix or the streusel doesn't turn out right, it's okay if you have uneven chunks.
7. Add streusel crumble to the top of batter, completely covering the plums.
8. Bake in oven for 50 minutes.
9. Let cool and enjoy!

This plum crumble cake is the perfect dessert for family dinners and holidays. It's pretty easy to make, balanced in flavors, it’s not to sweet, and the most important thing, it goes wonderfully with a cup of tea or coffee.

For the filling:
500 Plums
Lemon zest
3 tablespoons (37g) Brown/white Sugar
30g Cornstarch
For the crumble:
1¼ (125g) Rolled oats
1 cup (125g) Plain flour or whole wheat flour
1/2 cup (115g) Butter, softened
1/4 cup (50g) Brown/white sugar
1 teaspoon Baking powder
Pinch Salt
Directions:
1. Preheat oven to 180C (350F). Line the bottom and the sides of a 8-inch (20cm) round cake pan with parchment paper.
2. Prepare the filling: cut the plums in half, remove the pit, then cut each half into 3-4 pieces. Transfer the plums into a large bowl and add sugar, lemon zest and cornstarch. Mix well and set aside.
3. Make the crumble: in a large bowl, mix oats, flour, salt, sugar and baking powder. Add softened butter and rub with your fingertips until the mixture resembles crumbs.
4. Assemble the cake: spread half of the crumble on the bottom of the pan. Using a spoon or the bottom of a glass, press evenly the mixture. Them spread the filling on top of the crust. And sprinkle the remaining half of the crumble on top.
5. Bake for 30-35 minutes.
6. Release from the pan and serve with vanilla ice cream.
