Cookies 2 Ways! It’s Cookie Day today and what better way to celebrate it than to learn ways to make cookies of two different flavours! One is of a traditional Indian flavour with pistachios & cardamom whereas the other one is more global with universally loved chocolate chip cookie! If you’re a cookie lover, you gotta watch this video!
a) PISTACHIO & CARDAMOM COOKIES
Ingredients needed for Pistachio & Cardamom Cookies
55 gm butter
45 gm condensed milk
65 gm plain flour (maida)
1/2 tsp baking powder
cardamom 3 pods
Pistachios 1/2 cup
How to make Pistachio & Cardamom Cookies
1. In a bowl, take room temperature butter. Add condensed milk to it.
2. Beat it well.
3. Add cardamom powder for the flavour.
4. Add maida & baking powder to it. Mix really well.
5. Once a nice dough is formed, wrap it in cling film & keep it in a freezer for 2 hours.
6. Once firm and out of freezer, shape it into cookies & top it up with chopped pistachios.
7. Bake in a preheated oven for 10 mins at 180 Degrees C.
b) CHOCOLATE CHIP COOKIES
Ingredients needed for Chocolate Chip Cookies -
Maida - 1 Cup
Baking Soda - 1 Teaspoon
Salt - A Pinch
Butter - 1 Cup
Breakfast Sugar - 1/2 Cup
Brown Sugar - 1/2 Cup
Vanilla Extract - 1 Tablespoon
Milk - 1/4 Cup
Chocolate Chips - 2 Tablespoons
How to make Chocolate Chip Cookies -
1. Preheat oven to 180°C.
2. Mix flour, baking soda and salt in small bowl.
3. Beat butter, breakfast sugar, brown sugar and vanilla extract in large mixer bowl until creamy.
4. Add in flour mixture & mix well. Stir in Chocolate chips.
5. Refrigerate the mixture for 30 minutes.
6. Make small round balls of the mixture & place it onto greased baking sheets.
7. Bake at 180°C for 10- 15 minutes or until golden brown.
8. Cool on baking sheets for 2 minutes.
9. Enjoy hot or store it in a jar.

Pistachio Chocolate Chip Cookies
Makes 2 dozen
Ingredients:
1 1/2 Cups All Purpose Flour
1/2 teaspoon sea salt
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup (1 stick) unsalted butter, at room temperature
1/4 cup granulated sugar
3/4 cup light brown sugar
1 large egg
1 teaspoon vanilla extract
3/4 cup chopped pistachios
1 cup semi-sweet chocolate chips
sea salt for sparkling on cookies
Directions:
1. Preheat over to 350 degrees F. Line a large cooke sheet with parchment paper. set aside
2. In a large bowl, whisk together flour, salt, baking soda and baking powder. Set aside.
3. Cream the butter and sugars with a mixer. Should take about 3 minutes until light and fluffy. Add the egg and vanilla and beat for 2 more minutes. Slowing add in the flour mixture and mix until just incorporated.
4. Stir in the Chocolate chips and pistachios. Using a spoon or cookie scoop, form tablespoon sized balls of cookie dough. Place 12 cookie balls on baking sheet and sprinkle with sea salt. Bake for 12-14 minutes until edges are slightly browned. Let cookies sit on cookie sheet for 2 minutes then transfer to a cooling rack and let cool completely.

Pistachio Chocolate Chip Cookies | EASY Recipe
Get set to enjoy some Pistachio Chocolate Chip Cookies! These cookies mix the goodness of chocolate chips with the crunch of pistachios for a seriously tasty treat. Easy to make and absolutely delicious, they're great for whenever you're craving something delightful to snack on.Ingredients:
180g flour
Pinch of salt
1/2 teaspoon baking soda
1 teaspoon cornstarch
115g butter (at room temperature)
90g brown sugar
90g white sugar
1 egg
Vanilla extract (optional)
100g chocolate chips
100g chopped pistachios
Instructions:
1. In a bowl, mix the flour with salt, baking soda, and cornstarch. Set aside.
2. In a separate bowl, whisk the room-temperature butter using a hand mixer or stand mixer for about 2 minutes. Add both types of sugar and whisk for an additional minute until well combined.
3. Add the egg and whisk for 30 seconds until integrated.
4. Gently fold in the flour mixture until just combined. Avoid overmixing.
5. Finally, fold in the chocolate chips and chopped pistachios.
6. Use an ice cream scoop or shape the dough into medium-sized balls by hand. Place them on parchment paper, leaving ample space between each.
7. Lightly press down on each ball, then allow the shaped dough to rest in the refrigerator for 1 hour.
8. Preheat the oven to 180°C (350°F). Bake the cookies for 14-15 minutes or until lightly golden.
9. Remove the cookies from the oven and carefully transfer them to a cooling rack. Allow them to cool completely before serving.
Storage:
Store the Pistachio Chocolate Chip Cookies in an airtight container with a lid for up to 2-3 days.

Bake cookies with me! We're making these thick and chunky pistachio chocolate chip cookies loaded full of dark chocolate and crunchy pistachios. They're made with browned butter so they have a hint of caramelized flavour. No mixer or chilling needed!

150 g unsalted butter, cubed
150 g all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt

These cookies are one of the best cookies I've ever made! Rich pistachio cookies filled with delicious pistachio filling, tastes just like heaven!

Ingredients:
For the cookie dough:
1/4 cup (60g) Pistachio paste
3/4 cup (175g) Softened Butter, unsalted
2 eggs
3/4 cup (150g) Brown sugar
1/4 cup (50g) white sugar
1 teaspoon Vanilla extract
2¾ cups (340g) Flour
1 teaspoon Baking soda
1/4 teaspoon Salt
For the filling:
1/3 cup (80g) Pistachio paste
180g White chocolate
For topping:
Chopped pistachios (optional)
Directions:
1. Make the filling: chop white chocolate, place in a heatproof bowl, add pistachio paste. Melt and mix until combined and smooth.
2. Place the bowl in the fridge for 30 minutes, them scoop about 1 teaspoon each time and shape a bowl. place on a plate and freeze while making the dough.
3. Make the cookie dough: In a large bowl, beat butter, pistachio paste, brown sugar and white sugar. Beat until creamy, about 2 minutes. Add egg, vanilla extract and beat until combined, scrape the bottom and sides as needed.
4. Sift in flour, baking soda, salt. Mix until combined.
5. At this stage if dough is too soft, cover and refrigerate for 20 minutes.
6. Preheat oven to 350°F (175°C). line two baking trays with parchment paper.
7. Scoop out about 1-2 tablespoons of cookie dough and flatten it, place frozen pistachio filling in the center, roll into a ball.
8. Place rolled balls on a parchment paper with about 2 inches apart. Top each cookie with chopped pistachios (optional).
9. Bake for 10-12 minutes or until lightly browned on the sides.
10. Cool on baking sheets for 10 minutes before transferring to wire racks to cool completely.
