Hello and Happy Easter my Friends, welcome to my Southern Kitchen, hope all of y’all are doing well, staying safe and healthy!!!
Easter is one of my favorite Holidays next to Thanksgiving and Christmas and it is right around the corner! So today I am making a great Cookie recipe that would be perfect for Easter Dinner, M&M Chocolate Chip Cookies!
Chewy, soft, and bursting with Chocolate goodness; has 2 types of Chocolate: Chocolate Chips and Pastel M&Ms! Everyone will love and enjoy these Cookies and fun to make with your Children, screams Spring and Easter!!!
Ellen’s Cookie recipes playlist:
1/4 cup (1/2 stick) unsalted butter, softened
1/4 cup butter flavor shortening
1/4 cup white sugar
1/2 cup packed light brown sugar
1 extra-large or jumbo egg, room temperature
1 teaspoon pure vanilla extract
1 2/3 cups self rising or all purpose flour
1 teaspoon baking powder (if using all purpose flour)
1/2 teaspoon baking soda
1/2 teaspoon salt (if using all purpose flour)
1/2 cup chocolate chips (milk, semi-sweet, or dark)
1/2 cup pastel color Easter M&Ms
In a medium bowl, add the flour, baking soda, (baking powder and salt, if using); sift or whisk together until well combined. Set aside.
In a large bowl using a hand mixer, add in the butter, butter flavor shortening, white sugar, and brown sugar; cream on medium speed until well fluffy. Then add and mix in the egg, then add the vanilla extract and continue mixing until well incorporated. Slowly add in the flour mixture into the butter and shortening mixture and mix until well combined. Add and fold in the chocolate chips and M&Ms. Using an cookie scoop or large spoon, scoop the cookie dough using a tablespoon full to a 9x13 inch cookie sheet lined with parchment paper or aluminum foil; please the cookies 1/2 inch apart then place them into the refrigerator and let them chill for about 1 hour.
Preheat Oven to 350 Degrees
Bake the cookies for 10 to 16 minutes or until golden brown (be careful not to over bake). Remove from the oven and cool on a wire rack for 10 minutes. Place the cookies onto a cake stand or platter, serve and enjoy!

How To Make Easter-Themed Chocolate Chip Cookies | Channel Mum
Nothing says treat quite like a buttery Chocolate Chip Cookie. These melt-in-your mouth cookies are a wonderful way to use up leftover Easter chocolate bars (just break it up into chunky pieces!) and will be a hit with the kids. They're a festive Easter holiday treat, but you can definitely make them year-round. Just make sure you're supervising little ones if you decide to make it with the kiddies! Chocolate Chip Cookies - makes approx 20 cookies
Ingredients
250g butter
140g sugar
300g plain flour
1 egg yolk
1 tsp vanilla paste
Your favourite chocolate bar, chopped roughly
Method
1) Preheat the oven to 180 c
2) In a bowl, mix all the ingredients with your hands until combined into a dough
3) Roll out on a floured surface and cut into your chosen shapes. If you don’t have a cookie cutter, a cup can do just as well
4) Bake in the oven for approximately 10 minutes (until they begin to brown)
5) Let them cool, then nibble them all up!

When I eat a cookie, I want that gooey chewy cookie sensation. I don't want dry and hard cookie results. To me, that is a biscuit not a cookie. You do not have to reserve this recipe for Easter egg cookies. Just swap the mini eggs out and use other ingredients or add in more chocolate chips.
This mini eggs cookies recipe, is also simple, there are just a few hard and fast rules to make your cookies chewy and gooey. Follow the recipe and watch the video, as I am most clear with the tips and tricks you need to abide by, to get the most decadent Easter cookies. If you start substituting butter for margarine, or the sugars for different ones, they will NOT turn out as good. Stick to the recipe method and the ingredients and you will have great cookies. If you want the cookies less gooey and chewy, then cook for an extra minute, but over baking spoils them in my opinion.

Easter Chocolate Chip Cookies
Ingredients:
1/2 cup butter
1/2 cup brown sugar
1/3 cup white sugar
pinch of salt
1 tsp baking powder
1 egg + 1 egg yolk
1 1/4 cup flour
Instructions:
Brown the butter. Chill until room temperature. I like to put it in the freezer for 15 minutes.
Add brown and white sugar, salt, baking powder and eggs. Mix. Add flour and chocolate chips and mix just until the flour is mixed in. Scoop the dough onto the baking tray. I am using 1/2 of the scoop. Chop some chocolate eggs and decorate the cookie dough on top.
Bake at 350F for 7 minutes. They tap the tray agains the table few times and bake additional 5 minutes.
