How To make Pina Colada Punch
5 Piece dried ginger root,
-bruised with spoon 5 tb Light-brown sugar
5 tb Cassia bark, broken in
-small pieces 3 1/3 c Water
10 China teabags
3 1/3 Shredded coconut
6 1/4 c Boiling water
8 3/4 c Pineapple juice
3 1/3 c Light rum or gin
Crushed ice Maraschino cherries Fresh pineapple chunks Fresh pineapple leaves (opt) Put ginger, sugar and cassia bark in a saucepan. Add 2/3 cup water and bring to a boil. Cover and simmer 5 minutes. Remove from heat and add teabags. Let stand 5 minutes, then strain into a bowl. In a blender or food processor, blend coconut and boiling water 1 minute. Let stand 5 minutes, then strain into tea mixture, pressing coconut to extract all moisture. Add pineapple juice and chill 1 hour. Add run or gin and stir well. Serve over crushed ice in tall glasses. Thread cocktail sticks with cherries and pineapple. Add a cocktail stick and swizzle stick to each glass. Garnish with pineapple leaves, if desired. VARIATION: Add more rum or gin for a stronger flavored drink.

PINA COLADA MILK PUNCH - Advanced Cocktail Technique?
The earliest clarified brandy Milk Punch recipe dates back to 1711, so it's not a new technique yet it has come back into vogue in recent years.
The earliest recipe calls for a gallon of brandy, five quarts of water, eight lemons, and two pounds of sugar. Two gallons of scalding hot “new milk” are added and after an hour it is then strained through a flannel bag. Camper English has published an in-depth article on Cooks Illustrated:
Benjamin Franklin had written a recipe for Milk Punch in 1763. It is a bit boozer and less sweet but has the same basic formula with the addition of nutmeg.
Milk washing uses the acids to curdle the milk and coagulate its casein proteins. The nest of curds settles to the bottom and 'filters' the drink as it's passed through the curd.
It also softens the flavors of the punch ingredients, stripping out astringent-tasting tannins and other polyphenols.

Important things to note when milk-washing / clarifying:
1. Always add the acidic drink to the milk and not the other way round
2. Use a drink to milk ratio of 4:1
3. The curds act as the filter and not the cheesecloth / coffee filter
4. Don't disturb the bed of curds if filtering a second time
5. The milk can be heated but isn't necessary
6. Be patient

INGREDIENTS (makes 500-600ml)
- 210ml Aged Rum (7 oz)
- 120ml Coconut Water (4 oz)
- 60ml Falernum (2 oz)
- 120ml Pineapple Juice (4 oz)
- 15ml Demerera Syrup (0.5 oz)
- 45ml Fresh Lime Juice (1.5 oz)
- 120ml Whole Milk (4 oz)
METHOD
1. Combine all the ingredients except the milk into a jug
2. Add the whole milk into a second jug
3. Slowly add the contents of the first jug to the milk (add to the milk and not the other way round)
4. Stir gently
5. Strain through cheesecloth, a tea towel or coffee filter
6. Wait patiently
7. Transfer the first 25% of the strained drink back into the filter (careful not to disturb the bed of curds)
8. Alternatively, strain everything a second time

PIÑA COLADA - the ultimate vacation drink!
In today's video, I'm making a piña colada! There are a few different ways to mix this one up, and I'm going to show you how I do it. Three flavors come together in the piña colada - coconut, pineapple, and rum. With this recipe, I use both cream of coconut for sweetness and coconut milk to provide a silky texture. For the pineapple, I like a good amount of juice to balance the rich coconut, and because of that I like using fresh juice (canned juice will still taste good). Then for the rum I'm using a nice light rum. Traditionally it would be a Puerto Rican rum, but you should use whatever rum you like - combine it with coconut and pineapple and it's going to be tasty!

2 oz. (60 ml) The Real McCoy 3 year Rum
1 oz. (30 ml) homemade cream of coconut (recipe below) OR Coco Lopez Cream of Coconut
1 oz. (30 ml) coconut milk
6 oz. (180 ml) fresh pineapple juice
8-10 oz. (240-300 ml) crushed ice

13.5 oz. (400ml) unsweetened full fat coconut milk (1 can)
Pinch of salt
In a medium sauce pan, combine sugar, coconut milk, and salt. Stir over heat until sugar is completely dissolved.
