How To make Bread In Jars: Pina Colada
1 can pineapple
(20 oz) crushed
1 c margarine :
at room temperature
3 1/2 c brown sugar packed
4 egg whites :
whipped
1/2 c rum
3 1/3 c unbleached flour
1 1/2 tsps baking powder
1 tsp baking soda
1 c coconut -- shredded
Preheat oven at 325. Before starting batter, wash 8 (1 pint) wide mouth canning jars with lids in hot soapy water and let drain, dry, and cool to room temperat ure. Generously prepare jars with cooking spray and flour. Drain pineapple for 10 minutes, reserving juice. Puree drained pineapple in a blender.
Measure ou t 1 1/2 cups puree, adding a little juice if necessary to make 1 1/2 cups. Set puree aside. Discard remaining juice. In a mixing bowl, combine applesauce, hal f brown sugar until light and fluffy. Beat in egg whites and pineapple puree. Set aside. In another mixing bowl, combine flour, baking powder, and baking sod a. Gradually, add to pineapple mixture in thirds, beating well with each additi on. Stir in coconut. Spoon 1 level cupful of batter into each jar. Carefully wipe rims clean, then place jars on baking sheet (or they'll tip over) in the ce nter of oven. Bake 40 minutes. Keep lids in hot water until they're used. Whe n cakes are done, remove jars which are HOT from oven one at a time. If rims need cleaning, use moistened paper to wel. Carefully put lids and rings in place, then screw tops on tightly shut. P lace jars on a wire rack; they will seal as they cool.
Once jars are cool, decorate with round pieces of cloth and then glue on flowers , ribbons, etc. on lid, ring and side of jar. Unscrew the ring (the lid should be sealed by now) and place a few cotton balls on top of the lid (makes it poofy on top), then a piece of cloth (about 3" larger than the lid) on top and screw the ring back on. Decorate as desired (example pinking shears).

NO BAKE PINA COLADA SQUARES!! ICEBOX DESSERT!!
Today I am pulling a recipe from the vault. This was shared back in 2015 and it is a great dessert for hot summer nights! This pina colada ice box squares recipe is super simple to throw together and boy is it packed with flavor! It has simple ingredients that you may already have on hand and it is family friendly but delicious enough to serve to guests after a delicious grilled meal! Graham cracker crust studded with toasted coconut topped with a creamy mixture of cream cheese, sweetened condensed milk, crushed pineapple and coconut then topped with even more delicious toasty coconut! This one is definitely a winner for anyone who loves the tropical combination of pina colada!

COCONUT MOUSSE
1 tablespoon cold water
2.5 teaspoons powdered gelatin
200ml coconut milk, full fat
1/4 teaspoon vanilla extract
30g powdered sugar
200ml heavy whipping cream
THE COCONUT
100g 70% dark chocolate
Shredded coconut, toasted
Coconut mousse mixture
PINEAPPLE FLAMBÉ
Pineapple, cut to desired size
3 tablespoons sugar
3 tablespoons unsalted butter
1 teaspoon vanilla extract
2 tablespoons rum
COCONUT CAKE
3 eggs, yolks and whites separated
70g + 20g sugar
1/2 teaspoon vanilla extract
60ml whole milk
110g all-purpose flour
1.5g salt
3.5g baking powder
Coconut milk to soak
Toasted shredded coconut to coat the cake
PASSION FRUIT CURD
200g passion fruit puree, seedless
2 tablespoons sugar
2 whole eggs
2 teaspoons cornstarch
3 tablespoons unsalted butter
PIÑA COLADA
1 tablespoon rum, or more to taste
2 tablespoons coconut cream
3 tablespoons pineapple juice
A handful chunks of pineapple
A handful ice cubes made from coconut water
PASSION FRUIT SEEDS

Zap away the summer heat as you plunge your mind into this refreshing summer special fruit drink, Virgin Pina Colada.
'Pina' means Pineapple and 'Colada' means strained, thus 'Pina Colada' is a refreshing, strained pineapple drink. This tropical fruit drink has in it the sweetness of coconut milk blending with the sourness of the pineapple fruit. Virgin Pina Colada has been the official beverage of Puerto Rico since 1978. Chef Ruchi Bharani brings you the alcohol-free recipe of this legendary rum-based drink.
Ingredients:
2 cups pineapple juice
2 tbsp. dehydrated coconut milk powder
1 cup vanilla ice-cream
Few Ice Cubes
Method:
- Add 2 cups of pineapple juice, 2 tbsp. dehydrated coconut milk powder, 1 cup of vanilla ice-cream and a few ice cubes in a jar and blend it.
- Pour the drink in a glass and your Virgin Pina Colada is ready to be served.
