Servings 12
4 eggs
125 g sugar
140g flour
1g salt
3 g baking powder
50 g butter
50ml milk
vanilla
Frosting
butter 50 gr
cream cheese 120gr
1tsp pineapple extract
200 gr powdered sugar
Bake at 175'C for 25 min.

An easy recipe to make delicious and flavourful Pina Colada cupcakes.
PINA COLADA CUPCAKES
Ingredients
Cupcakes
4 tbsps crushed pineapple
½ cup pineapple juice
6 tbsps butter, room temperature
¾ cup castor sugar
3 egg whites
6 tbsps sour cream
1¼ cups refined flour (maida)
2 tsps baking powder
Frosting
¾ cup butter, room temperature
2 cups powdered sugar
2 tbsps sour cream
2 tbsps crushed pineapple
2 tbsps vegetable shortening, room temperature
Pineapple pieces for garnish
Method
1. Preheat oven at 180̊ C.
2. In a bowl, cream together butter and castor sugar till light. Add egg whites and beat well. Add sour cream and beat again. Add crushed pineapple and pineapple juice and beat well.
3. Add flour and baking powder and mix well to avoid lumps. Transfer the batter in a piping bag.
4. Pipe prepared batter into individual cupcake moulds filling ¾. Bake for 15-20 minutes. Remove from oven, allow to cool slightly and de-mould. Set aside to cool completely.
5. To make the frosting, in a bowl, cream together butter and powdered sugar till light. Add sour cream and pineapple and beat till well combined. Add shortening and mix well. Fill the frosting in a piping bag.
6. Pipe out the frosting on the cupcakes, garnish with pineapple pieces and serve.

Today’s recipe was inspired by one of my favorite “activities.” A beach, a book, a piña colada, and an impossibly blue sky. Pure contentment right there. Though today’s piña colada cupcakes don’t have any alcohol in them, I’m not stopping you from serving them with a beachy alcoholic beverage. No judging here!
Piña Colada Cupcakes - Easy to make cupcake recipe with frosting Pineapple, coconut and rum create a tropical paradise of flavor in frosted easy-mix cupcakes. Have your piña colada and eat it too! These extra moist pineapple coconut cupcakes will make everyday seem like a trip to the beach.
Ingredients
All Purpose Flour / Maida – 3/4 cup / 90 grams
Baking Powder – 3/4 tsp
Salt a pinch
Sugar – 1/4 cup / 50 grams
Pineapple Puree – 1/2 cup
Unsalted Butter – 2 tbl spoon
Egg – 1
Vanilla Essence / Coconut Essence – 1 tsp
METHOD
-Preheat oven to 180 degree C. Line 6 cup muffin tray with cupcake liners and set aside.
-Take flour, baking powder and salt in a bowl and mix well. Set aside.
-Take butter in a bowl, add in sugar and vanilla and coconut essence if using and whip till creamy.
-Now add in eggs and pineapple and whip again till creamy.
-Now add in flour mix and fold gently.
-Now scoop this into cupcake cases and bake for 20 mins.
-Now remove it and cool completely.
For Topping:
Whipping Cream – 1/2 cup
Icing Sugar – 1 tblspn
Coconut Essence – 1/4 tsp (optional)
Shredded Coconut – as needed
(My 1 cup measures 240 ml)
whip some cream with sugar and coconut essence till stiff.
Now take your cooled cupcake, top with cream and coconut.

Ingredients:
1 pack pineapple cake mix
3 eggs, beaten
1/2 cup cooking oil
1 cup of water
12 cherries with stems (Purchased at Target)
1 cup of pineapples, cup up
1/4 cup coconut flakes
Cream Cheese Frosting:
1/2 cream cheese bar, room temperature
1 cup heavy whipping cream
1/2 cup confectioners sugar
1/2 tsp vanilla extract
*Recipe for 12 cupcakes
