Pina Colada Cupcakes Recipe:
Ingredients:
1 pack pineapple cake mix
3 eggs, beaten
1/2 cup cooking oil
1 cup of water
12 cherries with stems (Purchased at Target)
1 cup of pineapples, cup up
1/4 cup coconut flakes
Cream Cheese Frosting:
1/2 cream cheese bar, room temperature
1 cup heavy whipping cream
1/2 cup confectioners sugar
1/2 tsp vanilla extract
*Recipe for 12 cupcakes

How to make pineapple coconut muffins

Ingredients:
All purpose flour/ Maida-2 cups ( 260 g)
Sugar-3/4 cup which is 1/2 cup +1/4 cup ( 150 g )
Vanilla essence-1 teaspoon
Egg-2 large ( at room temperature)
Milk-1/2 cup ( 125 ml) ( at room temperature)
Pineapple juice drained from the canned pineapple-1/4 cup
Canned pineapple-1 cup ( 180 g ) Cut into small pieces.
shredded/ desiccated cocnut-1/4 cup
Salt-1/4 teaspoon
Baking powder-2 teaspoon
Unsalted Butter-100g Melted and cooled.
Baking:
Bake in a preheated oven at 180C for 25-30 minutes.
How many muffins :
12 standard muffins.
Notes:
1. I used canned pineapple. You can use fresh pineapple.

An easy recipe to make delicious and flavourful Pina Colada cupcakes.
PINA COLADA CUPCAKES
Ingredients
Cupcakes
4 tbsps crushed pineapple
½ cup pineapple juice
6 tbsps butter, room temperature
¾ cup castor sugar
3 egg whites
6 tbsps sour cream
1¼ cups refined flour (maida)
2 tsps baking powder
Frosting
¾ cup butter, room temperature
2 cups powdered sugar
2 tbsps sour cream
2 tbsps crushed pineapple
2 tbsps vegetable shortening, room temperature
Pineapple pieces for garnish
Method
1. Preheat oven at 180̊ C.
2. In a bowl, cream together butter and castor sugar till light. Add egg whites and beat well. Add sour cream and beat again. Add crushed pineapple and pineapple juice and beat well.
3. Add flour and baking powder and mix well to avoid lumps. Transfer the batter in a piping bag.
4. Pipe prepared batter into individual cupcake moulds filling ¾. Bake for 15-20 minutes. Remove from oven, allow to cool slightly and de-mould. Set aside to cool completely.
5. To make the frosting, in a bowl, cream together butter and powdered sugar till light. Add sour cream and pineapple and beat till well combined. Add shortening and mix well. Fill the frosting in a piping bag.
6. Pipe out the frosting on the cupcakes, garnish with pineapple pieces and serve.

Teig:
40 g flüssige Butter
60 g Zucker
1 Ei
20 ml Kokosmilch( aus der Dose)
35 g Ananaspüree oder in Stücken
75 g Mehl
1/2 Tl Backpulver
1 Prise Salz
10 g Kokosraspeln
Glasur:
40 g Puderzucker
20 ml Kokosmilch(aus der Dose)
- Kokosraspeln zum bestreuen
- Schokoraspeln wer mag
Im vorgeheizten Ofen bei 170 Grad Ober/Unterhitze zwischen 20 und 25 Minuten backen...

Einfach und schnell wird dieser Muffinsteig zusammengerührt. Mit Rum, Orangen- und Ananassaft, Orangenabrieb und Kokosraspel wird daraus ein Karibischer Kuchen.
