Rum Glaze---- 3/4 cup powdered sugar 1/2 teaspoon rum extract 2 to 3 teaspoons milk Beat egg slightly in medium bowl with fork. Stir in remaining ingredients except rum glaze just until moistened. Divide batter evenly among 12 2 1/2-inch muffin cups that have been greased on the bottom only. Bake about 15 minutes at 400 degrees or until golden brown. Immediately remove from cups and spread with rum glaze made by stirring together the sugar, rum extract and milk.

Today’s recipe was inspired by one of my favorite “activities.” A beach, a book, a piña colada, and an impossibly blue sky. Pure contentment right there. Though today’s piña colada cupcakes don’t have any alcohol in them, I’m not stopping you from serving them with a beachy alcoholic beverage. No judging here!
Piña Colada Cupcakes - Easy to make cupcake recipe with frosting Pineapple, coconut and rum create a tropical paradise of flavor in frosted easy-mix cupcakes. Have your piña colada and eat it too! These extra moist pineapple coconut cupcakes will make everyday seem like a trip to the beach.
Ingredients All Purpose Flour / Maida – 3/4 cup / 90 grams Baking Powder – 3/4 tsp Salt a pinch Sugar – 1/4 cup / 50 grams Pineapple Puree – 1/2 cup Unsalted Butter – 2 tbl spoon Egg – 1 Vanilla Essence / Coconut Essence – 1 tsp
METHOD -Preheat oven to 180 degree C. Line 6 cup muffin tray with cupcake liners and set aside. -Take flour, baking powder and salt in a bowl and mix well. Set aside. -Take butter in a bowl, add in sugar and vanilla and coconut essence if using and whip till creamy. -Now add in eggs and pineapple and whip again till creamy. -Now add in flour mix and fold gently. -Now scoop this into cupcake cases and bake for 20 mins. -Now remove it and cool completely.
For Topping: Whipping Cream – 1/2 cup Icing Sugar – 1 tblspn Coconut Essence – 1/4 tsp (optional) Shredded Coconut – as needed (My 1 cup measures 240 ml) whip some cream with sugar and coconut essence till stiff. Now take your cooled cupcake, top with cream and coconut.
