History
Pickled shrimp is a traditional Southern dish that has been popular for many generations. The origins of pickled shrimp can be traced back to the coastal regions of the Southern United States, where it was a common way to preserve seafood in the days before refrigeration.
The dish typically consists of raw shrimp that are marinated in a mixture of vinegar, spices, and seasonings for several hours or even overnight. This pickling process not only adds flavor to the shrimp but also helps to preserve it for longer periods of time.
Pickled shrimp was often served as a side dish or appetizer, but it also became a staple food for families during the Great Depression, as it was a cheap and easy way to get protein in their diets.
Today, pickled shrimp is still a popular dish in the Southern United States, particularly in the coastal regions. It is often served as a chilled appetizer or as a main dish and is commonly paired with other Southern staples such as boiled peanuts and cornbread.
Overall, pickled shrimp is a flavorful and classic Southern dish that has stood the test of time and remains a beloved cuisine in the region.

How to make PICKLED SHRIMP! This stuff is great.
Recipe: Use 8 cups vinegar and 6 cups sugar if you want to back the sweetness down a bit. Some folks go only 4 cups sugar but I like the sweet!
Put shrimp in a one gallon jar put a layer of shrimp and salt. (canning salt) use a total of 1 and 1/3 cups of salt and then cover with white vinegar.
Put it in the frig for 5 days shaking once every day.
After 5 days rinse of all the salt and vinegar.
Put the shrimp in fresh water and ice cubes for 1 hour.
In a pot put 8 cups of white vinegar, 5 to 7 cups of sugar, and
1/3 cup pickling spice, and 1/4 cup white zinfandel wine.
Bring to a boil and simmer for 3 to 5 minutes then cool until
cold. Put your shrimp in the gallon jar layered with sweet onions and pour the cooled mixture over the shrimp and onions and put it in the frig for at least 3 to 5 days before eating.
It lasts..... not very long! About 6 weeks to 2 months easy!
Enjoy!
