How To make Pesto (Basil Sauce)
Ingredients
1
cup
basil leaves
2
teaspoon
garlic, minced
1/2
cup
olive oil
2
tablespoon
pine nuts, chopped
1/8
teaspoon
salt
1
pepper, freshly ground
Directions:
Puree all the ingredients in a blender or in a food processor. Or, if you want to do it the traditional way, pound the basil leaves, garlic, salt & nuts together with a mortar & pestle & then beat in the olive oil.
Use in soups or toss with hot pasta & serve as a main dish. Smaller quantities make an ideal appetizer. Will keep in the refrigerator or will freeze.

Authentic Italian Pesto from Marcella Hazan
Recipe:
2 garlic cloves, smashed
2tbs pinenuts
4tbs EVOO
1.5c packed basil
2tbs butter
1/8tsp salt
1/2c parmesan
- toast your pinenuts in the olive oil, cool
- blitz the pine nuts and garlic
- add the basil and blitz
- add the butter, and while mixing, stream in the olive oil
- mix the parmesan and salt at the end
Use for Pesto Pasta, Avocado Pesto Toast, or in Grilled Cheese and Paninis

How to Make Basil Pesto (without Pine Nuts)
Pesto is a great way to use fresh basil from your garden. I opted to use sunflower seeds rather than the traditional Pine nuts. You could also substitute with Walnuts.
I also included the best way to preserve extra pesto for storage, vacuum sealing. Using this method the pesto will stay green, even after thawing.

It's so simple, so easy peasy BUT a lesson for you... do not wash the basil! With or without the nuts it still tastes fantastic!
