Massimo Bottura, the Italian restaurateur and chef-owner of three-Michelin-starred Osteria Francescana, knows a thing or two about homemade pesto. His restaurant just won #1 in the world on the prestigious Top 50 list.
Using a recipe from his cookbook, Bread Is Gold, Bottura loses the traditional pine nuts and uses breadcrumbs instead. The final product is a fresh and original pesto pasta dish from one of the best chefs in the world that's still simple enough to make at home.

The traditional Genovese method uses garlic, basil, pine nut, olive oil and parmesan or pecorino but Jamie encourages us to do like the Italians and make it with what we have available. Muz is back in the kitchen. So, have you ever made Pesto and it turns brown real quick? Well I have a secret for you on how to make it green and it will remain green. I will show you step by step on how I make Pesto sauce (my way), also how to pick it from your garden, if you decide to grown some Basil. This recipe is just my way of making it and can be altered to your liking. You can use more or less Garlic. You can use less or no butter. The cheese can be changed to your liking. Instead go using Asiago you use Parmesan or Parmigiano-Reggiano. Whichever you like. Just follow the outline of the recipe and change what you want, more of this and less of that.....

Basil Pesto Pasta Recipe
How to make the most delicious Basil Pesto Pasta. It’s tasty, easy, cheap, healthy, fresh, fragrant and full of flavour. This recipe is definitely a must-try. Please enjoy!
Serves - 2
Ingredients -
2 Cloves - Garlic
15g - Parmesan Cheese, Freshly Grated
15g - Pinenuts, Untoasted * See note down below
45g (1 Bunch) - Basil Leaves
3 Tbs - Extra Virgin Olive Oil
1 1/2 Tbs - Sea Salt (1/2 Tbs for pesto, 1 Tbs for pasta water)
1/4 tsp - Ground Black Pepper
250g - Spaghetti or Pasta of your choice
Parmesan Cheese and Basil to serve.
Note* - I have used untoasted pinenuts. You can toast these if you prefer. It adds an extra nutty flavour to the pesto. To toast, place the pinenuts on a baking tray and place in a preheated oven set to 180.C or 350.F and toast for 3-4 minutes, until lightly golden. Add to the blender as per usual.
