1 C sugar 1/2 C shortening 1 C persimmon pulp 1 t baking soda 1 egg, beaten 2 C flour 1 t cinnamon 1/2 t cloves 1/2 t salt 1 C chopped nuts 1 C raisins Preheat oven to 375 degrees F. Cream the sugar and shortening. Add the persimmon pulp and baking soda, mix well. Blend in the remaining ingredients. Drop by rounded teaspoonfuls onto greased baking sheet. Bake for 12-15 minutes. Makes 3 dozen.

Persimmon Cookies 1 cup persimmon pulp (about 3 fruits) 1 cup sugar 1/2 cup shortening 1 egg 1 cup raisins 1 cup walnuts 1 cup chopped dates 2 cups flour 1 tsp baking soda 1/2 tsp each cinnamon, cloves, nutmeg dash of salt
Cream sugar and shortening. Add pulp and eggs. Stir in raisin, nuts, dates. Mix dry ingredients and mix into creamed mixture. Drop onto cookie sheet with teaspoons or a cookie scoop. bake in a preheated oven at 350F for 15-20 minutes.
