Holiday Baking | Persimmon Bread | Vlogmas Day 6

This year I have decided to participate in Vlogmas 2017.. What is Vlogmas? I will be posting videos daily from now until Christmas, showing how our family celebrates the season. Vlogmas is like a modern day advent calendar and it is my hope to spread some Holiday cheer. Vlogmas Day 6 is dedicated to holiday baking, specifically Persimmon Bread. Shelby

Persimmon Bread recipe;
-3 cups sugar
-4 eggs
-1 cup canola oil (or any neutral oil)
-1 teaspoon ground cinnamon
-1 teaspoon ground nutmeg
-1 1/2 teaspoons salt
-1 cup persimmon pulp (about 2 persimmons)
-2/3 cup water
-2 teaspoons baking soda
-3 cups flour
-1 cup chopped walnuts
Mix together the first 6 ingredients. Add persimmon pulp and water. Gradually mix in flour, and baking soda. Fold in walnuts. My mom used to bake hers in a one pound coffee can, but I bake mine in the mini loaf pans that have been sprayed with cooking spray and dusted with flour. Bake in a preheated 350 degree oven for 50 minutes. Turn out onto cooling rack. Simply the BEST! Shelby

'Tis the season for cookies, and one of my family's favorite cookies is persimmon. My persimmon cookies are a big hit, no matter the occasion. The cookie itself is very soft and cake-like, with a light orange glaze to make it pretty. Then the real shock sets in when people who eat gluten-free and allergy-free are amazed it is ok for them to eat. It is always a win when people can’t believe it is free of this or that! After filming this video, my daughter went in to get some cookies. She came out with a cookie in each hand, chewing, smiling, and dancing….That is a WIN! 2 cups of all-purpose flour (240g)
1/2 tsp of salt (2g)
1 tsp of cinnamon (2g)
1 tsp of baking powder (5g)
1/2 tsp of baking soda (2g)
1/4 tsp of nutmeg (1g)
1/4 tsp of ground cloves (1g)
1/2 cup of softened unsalted butter (113g)
1/2 cup of white granulated sugar (100g)
1/2 cup of brown sugar (100g)
1 large egg
1/2 tsp of vanilla extract (2g) (optional)
1 cup of raisins (optional) (160g)
1 cup of chopped walnuts (optional) (115g)
