This year I have decided to participate in Vlogmas 2017.. What is Vlogmas? I will be posting videos daily from now until Christmas, showing how our family celebrates the season. Vlogmas is like a modern day advent calendar and it is my hope to spread some Holiday cheer. Vlogmas Day 6 is dedicated to holiday baking, specifically Persimmon Bread. Shelby
Persimmon Bread recipe; -3 cups sugar -4 eggs -1 cup canola oil (or any neutral oil) -1 teaspoon ground cinnamon -1 teaspoon ground nutmeg -1 1/2 teaspoons salt -1 cup persimmon pulp (about 2 persimmons) -2/3 cup water -2 teaspoons baking soda -3 cups flour -1 cup chopped walnuts Mix together the first 6 ingredients. Add persimmon pulp and water. Gradually mix in flour, and baking soda. Fold in walnuts. My mom used to bake hers in a one pound coffee can, but I bake mine in the mini loaf pans that have been sprayed with cooking spray and dusted with flour. Bake in a preheated 350 degree oven for 50 minutes. Turn out onto cooling rack. Simply the BEST! Shelby

Persimmon Cookies 1 cup persimmon pulp (about 3 fruits) 1 cup sugar 1/2 cup shortening 1 egg 1 cup raisins 1 cup walnuts 1 cup chopped dates 2 cups flour 1 tsp baking soda 1/2 tsp each cinnamon, cloves, nutmeg dash of salt
Cream sugar and shortening. Add pulp and eggs. Stir in raisin, nuts, dates. Mix dry ingredients and mix into creamed mixture. Drop onto cookie sheet with teaspoons or a cookie scoop. bake in a preheated oven at 350F for 15-20 minutes.
