How To make Persimmon Cookies
3/4 c Sugar
1/2 c Butter or margerine
2 Eggs
1 c Strained persimmon pulp
1/2 c Coconut
1 c Chopped walnuts
1/2 ts Lemon extract
1 ts Cinnamon
1/2 ts Allspice
2 c Flour
1 ts Soda
1/2 ts Baking powder
Cream sugar and butter together. Add eggs and persimmon pulp. Mix well. Add walnuts, coconut, lemon extract, and spices. Sift together flour, soda, and baking powder. Add to mixture. Drop by teaspoons full onto greased and floured cookie sheet. Bake at 350 degrees F for 15 - 20 minutes. Notes: I do not use the coconut or the lemon extract, since I do not normally have these things around, and I have never floured a cookie sheet. They turned out fine. -----

Let's talk about persimmon cookies or rather about persimmon, a fruit that honestly I think has the coolest name - it makes me think of exotic settings in a fantasy world. But it's a real fruit that you can make delicious cookies with - so here is my recipe of persimmon cookies with walnuts and cranberries.
These are pretty easy to make, all it takes is patience to wait for the dough to chill.
Since I replaced most of the sugar with sweeteners, erythritol and sodium cyclamate as well as adding just enough walnuts and cranberries each cookie has about 124kcal, about 25% less then the usual recipe you'll find out there. a great lower calorie treat.

----------- INGREDIENTS (for 12 cookies) ------------
60g butter
75g sugar or 50g erythritol and 1/2 tsp sodium cyclamate
25g dark brown sugar
140g (1cup) All purpose flour
1/2 tsp baking powder
1/4 tsp salt
1tsp Pumpkin pie spice mix( 3part cinnamon, 1 part each of ground nutmeg, cloves & ginger powder)
150g (1/2 cup) Persimmon puree
1/2 tsp Vanilla extract
1 whole egg
30g (1/3 cup) toasted walnuts
30g (1/4 cup) dried cranberries
Persimmon Puree
Flesh from one fruit
2tbps mandarin juice
2tbsp water

How to Make Persimmon Cookies
Its a bit of tradition around the holidays for some to make fall cookies like Persimmon Cookies. Because you can only get persimmons for a short time during the year, usually only for about 2 months, and then the season is over.
What you will need: Preheat Oven to 350
2 to 3 Ripe Persimmons
Peeled and Pureed
2 Cups All Purpose Flour
1 Tsp Baking Soda
1/2 Tsp Salt
1/4 Tsp Ground Cinnamon
!/2 Tsp Ground Cloves
1/2 Tsp Ground Nutmeg
1 Egg
1 Cup Granulated Sugar
1/2 Cup softened Unsalted Butter
1 Cup Chopped Walnuts
1 Cup Raisins
Peel Persimmons and puree in food processor. Add the Baking Soda to the Persimmons, mix and set aside.
In your bowl, blend together the sugar and butter until fluffy.
Beat in the Egg and the Persimmons.
Now mix in the dry ingredients until creamy.
Drop by rounded tsp onto foiled lined cookie sheet
Cook each set for 15 minutes at 350
Let cool
