Lemony Cacio e Pepe

Yield: 4 to 6 servings
Ingredients
Kosher salt
1 pound spaghetti
6 tablespoons unsalted butter
2 1/2 teaspoons freshly ground black pepper, plus more for garnish
1 tablespoon lemon zest and 2 tablespoons lemon juice (from 1 lemon)
1 1/2 cups freshly grated Pecorino Romano cheese plus more for garnish
1 cup freshly grated Parmigiano-Reggiano
3 tablespoons chopped fresh chives
Directions
Bring a large pot of salted water to a boil and cook the spaghetti al dente according to package directions. Reserve 2 cups of pasta water and drain.
Add 4 tablespoons of the butter to a large, straight-sided pan and heat over medium. Once melted, add the pepper and toast for about 1 minute and 30 seconds. Add in about 1 1/4 cups of the reserved pasta water and the lemon zest, bring to a light simmer. Turn the heat down to medium-low and add the cooked spaghetti, Pecorino Romano, Parmigiano-Reggiano and the remaining 2 tablespoons of butter. Using tongs or two wooden spoons, toss the pasta and cheese together, incorporating about 1/2 additional cup more pasta water. Keep tossing the pasta until the cheese has completely melted and the sauce is silky and coating the pasta, 3 to 5 minutes. Add the lemon juice and chives and toss to combine. Serve immediately, topped with extra Pecorino Romano and black pepper.

LASAGNA GULUNG ISI AYAM SAUS KEJU // LASAGNA ROLLS WITH CHICKEN FILLING
Helooo, kali ini saya bikin olahan pasta lagi, yaitu lasagna gulung dengan isian ayam keju. Sebenernya mirip aja ama lasagna biasa hehe tp bedanya biasanya lasagna lebih banyak saus bolognesenya, kalo yang ini lebih banyakan kejunya. Pasta yang bentuknya gulungan/pipa gini biasanya disebut juga manicotti/cannelloni/rotolo, tapi saya kurang tau apa bentuk pastanya udah gulungan gitu atau pake yang lembaran gini lalu digulung :) Untuk isiannya biasanya pake keju ricotta/cream cheese, bayam dan jamur, tapi di sini saya pake ayam wortel saus keju aja. Isiannya bisa diganti macem2, mo pake ikan, udang, jamur, daging sapi atau sayur lainnya. Okeee, selamat mencobaa :)
RESEP LASAGNA GULUNG ISI AYAM KEJU
Untuk : 8 gulung
Bahan-bahan :
(*Saya juga tuliskan konversi gram-cup dengan catatan : sendok yang saya pakai adalah sendok takar. cup yang saya pakai adalah cup 240 ml. 1 cup=16 sdm. 1 sdm=3 sdt)
Isian ayam keju
150g daging ayam cincang
80g wortel, potong dadu kecil
1/4 bawang bombay, cincang
1 siung bawang putih, cincang
20g (1 1/2 sdm) mentega
10g (1 1/4 sdm) tepung terigu
200ml (3/4 cup + 1 sdm) susu
60g keju cheddar parut
1/8 sdt garam
sejumput merica
Sejumput pala
sejumput kaldu bubuk
1/8 sdt gula
4 lembar lasagna
200g saus marinara (bisa beli jadi atau bikin sendiri
100g keju quickmelt/mozzarella (optional)
sejumput seledri/oregano

Ingredients :
(*I also wrote the gram-cup conversion with some notes : the spoon that I used is a measuring spoon. The cup that I used is a 240ml cup. 1 cup=16 tbsp. 1 sdm=3 tsp)
CHICKEN CHEESE FILLING
150g ground chicken
80g carrot, small diced
1/4 onion, chopped
1 clove garlic, chopped
20g (1 1/2 tbsp) butter
10g (1 1/4 tbsp) flour
200ml (3/4 cup + 1 tbsp) milk
60g grated cheddar cheese
1/8 tsp salt
pinch of pepper
pinch of nutmeg
pinch of seasoning powder
1/8 tsp sugar
4 lasagna sheet
200g marinara sauce
100g soft cheddar/mozzarella cheese (optional)
pinch of parsley/oregano

Vegetables in Red Sauce with Butter Garlic Herbed Rice Recipe | Chef Sanjyot Keer

Serves: 4-5 people
For butter garlic herbed rice
Ingredients:
• Oil 1 tsp + butter 1 tbsp
• Garlic 1 tbsp (chopped)
• Green chillies 1-2 nos. (chopped)
• Fresh coriander 1/4th cup (chopped)
• Mixed herbs 1 tsp
• Red chilli flakes 1 tsp
• Cooked rice 4 cups
• Salt to taste
• Black pepper a pinch
Methods:
• Set a wok on medium high heat, add oil & butter, garlic and green chillies, cook for a minute on medium flame.
• Further add fresh coriander, mixed herbs and red chilli flakes, quickly stir on medium high heat and further add cooked rice, salt & black pepper powder to taste, mix and toss well for 2-3 minutes on high flame.
• Butter garlic Herbed rice is ready, serve it hot with hot veggies in tomato sauce.
For veggies in red sauce
Ingredients:
For red sauce
• Tomatoes 6-7 medium size
• Oil 1 tbsp
• Garlic 4-5 cloves (sliced)
• Onions 1 medium size (chopped)
• Kashmiri red chilli powder 1 tbsp
• Coriander stems 1 tbsp (chopped)
• Salt to taste
• Black pepper powder a pinch
• Tomato ketchup 1 tbsp
• Sugar a pinch
• Oregano 1 tsp
• Red chilli flakes ½ tsp
For stir fried veggies
• Oil 1 tbsp
• Garlic 1 tbsp (chopped)
• Red chilli flakes 1 tsp
• Baby corn 1/3rd cup
• Carrot 1/3rd cup
• Green Zucchini 1/3rd cup
• Yellow Zucchini 1/3rd cup
• Mushroom 1/3rd cup
• Red bell peppers 1/3rd cup
• Yellow bell peppers 1/3rd cup
• Capsicum 1/3rd cup
• Broccoli 1/3rd cup (blanched)
• Salt & pepper to taste
• Lemon juice 1 tsp
Methods:
• For red sauce, wash the tomatoes well and cut them in quarters, further transfer them in a grinding jar and blend the tomatoes into a purée. I've kept it fine in texture, if you wish you could keep the texture little coarse.
• Set a sauce pan on low heat, add oil and sliced garlic, cook until the garlic turns light brown in colour.
• Add chopped onions and cook on medium flame until its translucent.
• Now lower the flame and add, Kashmiri red chilli powder & coriander stems, cook on low flame for about 15-30 seconds.
• Now, add the tomato purée, salt & black pepper powder to taste, tomato ketchup, sugar, oregano & red chilli flakes, stir and cook on medium high flame, for 2-3 minutes, further cover and cook for 8-10 minutes on medium flame.
• By the time the sauce gets ready you can make the stir fried veggies, for making stir fried veggies, set a wok on medium heat, add oil, garlic and red chilli flakes, cook for 1-2 minutes.
• Now, add baby corn & carrot and cook for 2-3 minutes on medium flame, further add the remaining veggies, salt & pepper to taste & lemon juice, stir and cook for 1-2 minutes, sautéed veggies are ready keep aside to be added in the red sauce.
• As the red sauce is ready, add the stir-fried veggies, stir and cook for 1-2 minutes.
• Veggies in red sauce is ready, serve hot with hot herbed rice.
