Hush Puppy Recipe - What's Cooking with Paula Deen
On today's episode of what's cooking with Paula Deen, Paula talks about her hush puppy recipe, tips to make them awesome and offers the best way to making delicious fried fish.
Tips:
1. Use Peanut Oil
2. Use Self Rising Corn Meal and flour - but don't use a lot of salt as they are in the self rising products
3. Use Alabama King for your Corn Meal. Paula has been using it for over 40 years.
4. The most important ingredient in the hush puppies is the onion
5. Dip your spoon in cold water to make it easier for the hush puppy to come off the spoon
6. Flip them over with a slotted spoon so you don't get too heavy on one side.
7. For extra zing, feel free to add in jalapenos
Hush Puppies
Ingredients:
1 1/2 cups self rising corn meal
1/2 cup self rising flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 egg lightly beaten
onion, chopped
Directions:
1. Combine corn meal, flour, baking soda and salt. Whisk together.
2. Add egg.
3. Slowly add buttermilk while whisking. Continue to whisk until thick consistency.
4. Stir in chopped onion and let sit for a few minutes to thicken.
5. Use a teaspoon to scoop batter into fryer. Make sure to dip the teaspoon in cold water each time before scooping batter.
6. Drop heaping teaspoon of batter into fryer and turn them quickly to fry them evenly on both sides.
7. Fry until golden brown.
FRIED FISH
1. Season with salt and pepper (use a generous amount of salt).
2. Season with old bay (also contains salt so be careful not to put too much salt).
3. Create coating by combining four parts flour to one part corn meal.
4. Sprinkle fish with buttermilk (optional)
5. Coat fish in mixture
6. Deep fry in peanut oil, at about 350 degrees F
7. Fry until fish has just loss its translucent look (this won’t take long).
Gluten Free Hush Puppies - Traditional Remoulade | Chef Terry
As promised I have created a video on Hush Puppies and as is my usual. I made them gluten free. Hush Puppies are a tradition southern side dish that us usually served with fried seafood. These Fritters are easy to make and can be flavored in many ways. Oh, I also Serve them with a traditional remoulade. A bit different than the Cajun Remoulade I made in my Mayo Video.
Gluten Free
Hush Puppies
1/2 cup Corn Meal
1/4 cup Masa Harina
1/4 cup Corn Starch
1 teaspoon Baking Powder
2 teaspoon Creole Seasoning
1/2 Onion, fine dice
1/2 cup Milk
1 Egg
Traditional Remoulade
1/4 cup Chopped Gerkins
1/4 cup Chopped Capers
1/4 cup Chopped Onion
1 tablespoon Horseradish
1 tablespoon Anchovy Paste
1 cup Mayo
2 - 3 tablespoons Lemon Juice
Black Pepper to taste

-- RECIPE --
Add 2-3qt/L (depending on size of pot) of neutral oil to a large heavy bottom pot and heat over medium high until it reaches a temp of 350F/175C. Oil should only come halfway up your pot or less.
FREID CATFISH
▪2lbs/1kg thawed american catfish filets (sub tilapia)
▪100g or 3/4c ap flour
▪15g or 1.5Tbsp salt
▪5g or 2tsp black pepper
▪10g or 2tsp garlic powder
▪10g or 2 3/4tsp onion powder
▪5g or 2tsp paprika
▪2g or 3/4tsp cayenne
▪100g or 1/2c medium grind corn meal
▪100g or 2/3c finely ground corn meal (blitz medium grind in blender/food processor)
▪500g or 2c buttermilk (or sour cream and milk)
▪30g or 2Tbsp hot sauce
Cut filets on a bias so that you have pieces that are roughly the same weight. Set on a wire rack and salt both sides of fillets. Allow to cure for 20 minutes
In a bowl, stir together flour, 15g salt, black pepper, garlic powder, onion powder, paprika, cayenne, and corn meal.
In a separate bowl, stir together buttermilk and hot sauce.
To bread the fish, drop each fillet into the buttermilk mix to coat. Drain off well then drop fillet into dry mixture and coat well. Toss back and forth in your hands to remove excess batter.
Carefully lower filets away from your body into preheated 350F/175C oil, frying 2 at a time, for about 4-5 minutes flipping filets over halfway through. Fish is done with it’s crispy and golden brown. Transfer to wire rack or towels to drain why you fry the rest.

HUSHPUPPIES
▪65g or 1/2c ap flour
▪150g or 3/4c + 2Tbsp med-fine grind cornmeal
▪8g or 1/2Tbsp salt
▪10g or 2tsp baking powder
▪10g or 2 1/2tsp sugar
▪2g or 3/4tsp cayenne
▪75g or 2/3c onions, small diced
▪25g or 1.5tbsp melted unsalted butter
▪1 egg
▪200g or 3/4c + 1 1/2Tbsp buttermilk (or milk + sour cream)
For the batter, whisk together 65g ap flour, med-fine grind corn meal, salt, baking powder, sugar, cayenne, onions, melted butter, egg, and buttermilk.
Carefully drop large spoonfuls of batter (working in 2 batches) into hot oil and fry for about 2.5 minutes, flipping over halfway through. Puppies are done when they’re crispy and dark golden brown. Remove from oil and drain on wire rack.

SPICY MAYO TARTAR SAUCE
▪100g or 1/2c mayo
▪75g or 1/4c ketchup
▪30g or 2Tbsp hot sauce
▪20g or 1 1/2Tbsp yellow mustard
▪25g or 1 1/2Tbsp lemon juice
▪15g or 3 1/2Tbsp worcestershire
▪25g or 2.5Tbsp shallot
▪1 garlic clove
▪3g or 1tsp paprika
▪3g or 1tsp black pepper
▪3g or 1tsp salt
Spin ingredients in a food processor until smooth.

Hush Puppies
How to make southern hush puppies, perfect with fried seafood. If you like Long John Silver's Hush Puppies, you will love these!
Ingredients:
1 and 1/2 cups all-purpose flour
1 and 1/2 cups cornmeal
2 Tablespoons baking powder
2 Tablespoons sugar
1 Tablespoon baking soda
2 teaspoons kosher salt or 1 teaspoon table salt
1/2 teaspoon cayenne pepper
1 and 1/4 cups buttermilk
(not 1 and 1/2 cups, I miss spoke in the video)
2 eggs
1 onion (grated is best)
1 Tablespoon jalapenos or more!
oil for frying @ 350 to 375F
Tartar sauce for serving

Crispy Golden Hush Puppies
Deep fried to perfection.
INGREDIENTS:
1/2 Cup Flour
1/2 Cup Cornmeal
1/2 Tbsp Sugar
1/4 tsp Baking Soda
1/4 tsp Baking Powder
Salt
Pepper
Cajun
1/4 Cup Milk
1/4 Tbsp White Vinegar
1 Tbsp Vegetable Oil
1 Egg
Onion
Garlic
Cooking Oil
HOW TO COOK:
1. Whisk together flour, cornmeal, sugar, baking soda, baking powder, salt, pepper, and cajun.
2. In another bowl add milk, vinegar, vegetable oil, and egg.
3. Finely grate onion and garlic, then add to wet ingredients and whisk.
4. Add dry ingredients to wet and mix.
5. Heat oil to 350°F then add batter for 3-5 minutes.

HUSH PUPPIES | Sweet and Savory

3/4 yellow sweet onion
2 cups bolted cornmeal (white or yellow)
1 cup self rising flour
1 1/2 cups buttermilk
Salt and Pepper
1 egg
Sugar (optional)
Mix together all ingredients until thick and well combined. Let sit in fridge for 20 minutes. Using ice cream scoop, dip scoop in hot oil (300-325 degrees) and scoop a ball of batter. Drop in hot oil, making sure to dip scoop in oil each time to keep from sticking. As hush puppies brown, make sure to flip/roll them over so they cook on all sides. Once golden brown, remove and drain on a paper towel.
